Post Oak-Grilled Chicken with Pecan-Fresno Mojo Rojo

Marinated chicken leg quarter grilled over post oak and finished with a smoky, bright Fresno pepper mojo rojo made with charred peppers, toasted pecans, garlic, fresh lemon and sherry vinegar.
Served over beef-tallow roasted smashed potatoes with charred okra finished with Prosecco vinegar and a grilled lemon.
