Continuing Chef Charles' theme of comfortable flavors elevated, let's talk cheesecake.

Animal cracker crust. Yes, a childhood core memory is now the foundation of this delicious offering. Strawberries, milk chocolate ganache, crème anglaise, and salted vanilla whipped cream come together for a cheesecake that feels familiar in all the right ways, just elevated the Black Sage way.

What goes into a Feature at Black Sage?

Our core menu has its fan favorites, but the Features Menu gives Chef Charles a chance to explore something new from week to week.

Our farm-to-table mentality plays a big part. The season, what our farms and partners have available, what looks particularly good that week, and, of course, Chef Charles' latest personal fixations all find their way into the kitchen.

Sometimes it's a familiar ingredient used in an unexpected way. Other times it's a flavor, technique, or a dish Chef simply can't stop thinking about. That freedom gives our guests something new to discover with each visit.

Thoughtful ingredients, a little inspiration, and plenty of creativity. You never quite know what will make the next Features Menu, and that's part of the fun.

One of the top restaurants in all of Utah? And recognized in one of the best ways possible, by the guests who have joined us around the table.

Black Sage was recently named among OpenTable's Best Overall Restaurants in Utah, a list built from nearly 2 million diner reviews and the experiences shared by guests themselves.

For our small team, tucked away in a private canyon in the Southern Utah desert, this one means a lot. It's a reflection of Chef Charles' thoughtful menu, the details behind every plate, the setting, the service and our dedicated staff, and the complete Black Sage experience.

Zion is the draw. Towering cliffs, unparalleled hikes, and unforgettable vistas bring people from around the world. The park can be busy, but the experience is well worth it.

Black Sage is the juxtaposition to that adventure. Purposefully tucked away, quiet, serene, and intimate. A small team, a carefully limited reservation list, and an attention to every detail allows us to control the experience from beginning to end.

Farm-to-table means more than simply buying local.

At Black Sage, it starts close to home whenever possible. The ranch, the greens and fruits, the cheese, the baker—ingredients sourced from people we know and relationships we've built. When something can't come from our backyard, we seek out trusted partners who share that same approach, such as sourcing fresh fish from Alaska to the waters of the Great Lakes.

It also means respecting everything that comes through the kitchen. Rather than buying the bulk of a single cut, Chef Charles looks for ways to use the whole animal. Thoughtful preservation, creative recipes, and a menu that evolves around what is available allows us to make the most of the entire offering.

Know where it came from. Know the people behind it. Respect the ingredient, and find a way to make every bit of it matter.
