“What are those cotton bags in your pho?” 👀🍜

Great question. Those are woven cotton bags we use to steep our spices, think of them like a giant tea bag for our broth.

They let us pack in all our whole spices and aromatics like green cardamom, star anise, cinnamon, and coriander, so every bit of flavor gets infused into the broth without ending up in your bowl.

It’s a small detail. But small details are exactly what 48 hours of pho is made of.

Earlier this year, we made a conscious effort to make our menu as gluten-free friendly as possible.

The biggest change? Our Crispy Egg Rolls. We switched from wheat wrappers to rice paper. Same signature filling. Same golden crunch. Zero gluten.

Here’s where our menu stands today:

✔ All proteins — gluten-free
✔ All pho broths — gluten-free
✔ Vietnamese wings — gluten-free
✔ Crispy egg rolls — now gluten-free
✔ Summer rolls — gluten-free
✔ Rice noodles, glass noodles, garlic rice — gluten-free

The only items that still contain gluten are our bánh mì bread, hoisin sauce, and peanut sauce. Our team is always happy to guide you through the menu.

We’re not done yet. But we’re proud of how far we’ve come. 💛
