8 Tips for Foolproof Fish Grilling:

Eight quick tips to make your time cooking outdoors even better!

1. Lightly oil both sides of the fish and the grill grate just before grilling unless the fish has been marinating in an oil-based marinade.

2. For fillets that are thick at one end and thin at the other, tuck under the thin end to even out the thickness.

3. Grill fish, covered, over medium heat a total of 10 minutes per inch of thickness, turning once. (If the fish is 1 inch thick, grill about 5 minutes per side.)

4. After cooking the first side, lighly oil the top side of the fish before turning.

5. Use a thin, sturdy, large metal spatula to turn the fillets.

6. Don't turn delicate or very thin fillets like sole.

7. To test for doneness, press lightly on the thickest part of the fillet. It's done when the fish just begins to flake.

8. If you use a fish griling basket, oil it before placing the fish in it.

Lookout! Seafood Improves Eyesight:

Nutrition and eye health are directly connected through all stages of life, from infancy to old age. Certain foods, such as fish, contain the nutrients necessary for development and prevention of unhealthy eyes.

The high levels of omega-3 essential fatty acids in seafood offer protection against macular degeneration (AMD) of the eye, a condition in which fine vision deteriorates, resulting in central vision loss and are the leading cause of blindness in people over 50. Studies strongly suggest that increasing intake of Omega-3 fatty acids, found in fatty fish, flax and walnuts, and bioflavonoid, found in berries, legumes, soy, tea and red wine, have also been linked to a lowered risk of macular degeneration.

Memorial Day (and the weekend) is only a few days away! What do you have planned?

If you have a BBQ, throw some salmon or shrimp on the grill. If you have a weekend trip, head to the beach and bring some pre-made snacks/meals or head to the best local seafood restaurant.

Memorial Day is a day to remember those who have fought for our country while enjoying the ones we have with the freedom we've been given. Happy Memorial Day!
