G*i Kua, also known as Guay Tiew Kua G*i, is a Thai dish that features stir-fried rice noodles with chicken. The noodles get a signature char from the wok, known as wok hei, giving them a smoky flavor. It’s a savory dish with a rich umami kick, and you can often top it with extras like a fried egg or chili sauce.
