Here are my 5 simple but important rules when it comes to meal prepping.
1. Cook for the reheat, not just for Day 1.
A meal can be incredible straight off the smoker and dry after two minutes in the microwave. BBQ meal-prep meats need enough moisture and fat to survive refrigeration and reheating.
2. Choose sides that actually reheat well.
Rice, potatoes, roasted vegetables, mac & cheese, beans and similar foods hold up beautifully. Delicate greens, crispy toppings and certain fresh veggies generally don’t.
3. Don’t sacrifice flavor for “healthy.”
Meal prep doesn’t have to mean plain chicken, broccoli and rice. BBQ has a major advantage here: smoke, dry rubs, spices and marinades create huge flavor without requiring meals to be drenched in heavy sauces. Meal prep shouldn’t have to be boring!
4. Build meals around protein first.
Start with the protein, then build the carb and vegetable around it. It makes creating balanced menus much easier.
5. Don’t overcook lean proteins.
Chicken breast, pork loin, turkey and lean steak are especially unforgiving. If they’re dry when they’re packaged, they’ll be even worse reheated.
