Spring in Iowa doesn’t arrive all at once—it unfolds, quietly and beautifully. This dinner is a reflection of that moment.

Join us at the table for an evening centered around seasonality, craftsmanship, and the connection between the land and the plate. Chef Ryan Skinner ( ) has curated a five-course menu that highlights the depth and freshness of early Iowa spring, beginning with handcrafted charcuterie and moving through:

First Course – Early Spring on the Prairie

Fava Beans, Foraged Ramps & Fresh Ricotta on Herbed Focaccia

Second Course – Green Garlic Rising

Hand-Rolled Potato Gnocchi, Speck, Spring Garlic Pesto, Farmstead Cheese

Third Course – After the Rain

Wild Mushrooms, Heritage Pork Shank, Slow-Stirred Risotto, Fire-Grilled Asparagus, Tender Herbs

Fourth Course – From the Yard

Chicken Roulade with Housemade Sausage, Creamy Polenta, Deepened Pan Jus

Fifth Course – First Thaw

Semolina Olive Oil Cake, Bright Orange Sorbet

Two drink pairings will be served alongside select courses, thoughtfully chosen to complement the progression of the meal.

An Iowa Spring Tasting — May 2nd at Plant Life Designs

There’s a short window each year when Iowa begins to wake up—and this menu captures it in its purest form.

Join us for our Field to Fork dinner, where Chef Ryan Skinner has created a five-course experience that reflects the flavors, textures, and spirit of early spring. Rooted in local agriculture and thoughtful sourcing, this is a night designed to bring people together around the table.

The evening begins with handcrafted charcuterie before moving into:

First Course – Early Spring on the Prairie

Fava Beans, Foraged Ramps & Fresh Ricotta on Herbed Focaccia

Second Course – Green Garlic Rising

There’s something special about a meal when you know where it came from.

On May 2nd, we’re gathering at Plant Life Designs in Van Meter, IA for the first Field to Fork dinner of the year—an evening centered around local farms, seasonal ingredients, and the people who produce them.

Each of our five courses is thoughtfully built around what’s being raised and grown right here in Iowa. It’s our way of supporting small farms and sharing the kind of food that reflects this place and this season.

Guests will be welcomed with a spread of local charcuterie, followed by a five course dinner, with two courses paired alongside carefully selected drinks.

Doors open at 5pm, with dinner running from 5–8pm.

It’s a relaxed, intentional evening to slow down, enjoy a great meal, and connect a little more closely to where your food comes from.

What a beautiful way to wrap up our first season! On October 21st, we hosted our final Field to Fork dinner of the year at — and it couldn’t have been a more fitting fall evening. The menu celebrated the season, weaving apples from the orchard into each course to create warm, comforting, and elegant dishes that everyone loved.

Thank you to everyone who joined us around the table this year. For those we haven’t had the chance to dine with yet, we can’t wait to share a meal with you next season. Here’s to good food, good company, and a growing community.
