Reverse-Seared Wagyu New York Strip 🔥🥩
One of my favorite ways to cook a great steak — low and slow first, then finished directly over hot charcoal for that crust. For this cook I used Golden Steer Sergio’s Seasoning, keeping the Wagyu simple and letting that steakhouse flavor and marbling do the talking. Served it up with a loaded grilled potato. 🔥
Ingredients:
1 Wagyu New York Strip
GoldenSteer Sergio’s Salt & Pepper Seasoning
Loaded potato: butter, cheese, bacon, sour cream & green onion
Kingsford charcoal
Recipe:
1. Pat the Wagyu dry and season generously on all sides with Golden Steer Sergio’s Seasoning.
2. Fire up the Char-Griller with Kingsford charcoal and set up a two-zone fire.
3. Place the Wagyu on the indirect side at approximately 225–250°F for the reverse sear.
4. Cook until the steak reaches approximately 110–115°F internal.
5. Move directly over the hot charcoal and sear for about 60–90 seconds per side until you get that beautiful crust. 🔥
6. Pull at approximately 128–132°F for my preferred medium-rare finish.
7. Rest for 7–10 minutes before slicing against the grain.
8. Serve with a loaded grilled potato and enjoy!
