Our goal was to serve our masterful dishes in a warm, inviting and unique atmosphere and as you look around our historic building we hope you’ll find our restaurant as aesthetically pleasing as it is comfortable. By obtaining our ingredients locally, we are able to play a role in conserving fossil fuels and reducing harmful emissions. Rather than construct a new building to perfectly suit our operation, we made the more sustainable choice to renovate and retrofit an existing structure. The Tailor & The Cook is housed in a building as old as the city of Utica. We chose as much locally produced, recycled, refurbished, and reclaimed materials as we could. PERFECT NIGHT OUT

Greens are a staple in Utica — if they’re made right, they’re one of the best dishes you can get around here.

We make our greens with escarole and swiss chard — you’ve got to pick a green with flavor, or you’re just eating water.

Bacon, sweet and hot peppers, white wine, and a garlic pecorino cream sauce add the flavor. Pecorino romano to finish. Served hot.

Built in 1893. Standing tall in 2026.

John C. Hieber immigrated to America in 1852, established his business here, and grew to become the region's leading wholesaler of dry goods.

Hieber commissioned Utica architect Frederick H. Gouge (1845-1927) to design the building for a sales and warehouse space — five stories, flat roofed, red brick, and a random ashlar stone foundation.

Many of its interior features and finishes have been carefully preserved — the supporting columns, pressed metal ceilings, and an ornate central oak staircase. Walking into Tailor & the Cook really is like stepping back in time. ⏳

That little flower on top of your drink isn't a garnish. It's a buzz button, also known as a Szechuan flower.

Historically, it was used in herbal medicine for curing a toothache or an upset stomach.

The secret is a compound called spilanthol that lights up your trigeminal nerve, the same one that registers the fizz of soda and the cold of mint. Bite down and your mouth tingles, buzzes, and floods — every taste bud snapping to attention.

What happens next is hard to describe. It's almost like tasting with every taste bud in your mouth. Or turning your drink up to full volume.

It's one of those things you just have to try yourself. 🌼
