Mango Sticky Rice Recipe

Ingredient
Sweet Glutenous Rice 1 lb
Coconut Milk (unshaken) 2 cup
Sugar 1cup
Salt 1 tsp
Pandan leaves (optional)4 pieces
Sweet Ripe Mango 2 pieces
For sauce
Coconut Milk 1/2 cup
Cornstarch 1 tsp
Salt 1/2 tsp
Methods:
1. Wash the rice until the water runs clear.
2. Presoak the rice with enough water to cover the rice, at least 4 hours or overnight before class.
3. Drain rice in colander to rid of all drops of water.
4. Put the steamer into boil over high heat.
5. Line the steamer with cheese cloth before you add the soaked rice into it. Allow to cook for 10-12 minutes.
6. Flip the rice, so the top part goes to the bottom and get cooked more evenly. Steam for another 10-12 minutes.
7. While the rice is being steamed, prepare the coconut sauces.
8. In a heavy bottom pot, mix together coconut milk, sugar and salt. Place the pot on the medium heat, allow the sugar to dissolve. Turn off the heat.
9. In another pot, mix together coconut milk, cornstarch and salt. Place the pot on the medium low heat, allow the sauce to thicken. Turn off the heat.
10. Once the sticky rice is cooked, place it in a large bowl, pour the sweeten coconut sauce over the rice. Gently fold the rice to incorporate with the sauce.
To serve, scoop the prepared rice onto a plate, drizzle a tablespoon of the salty sauce over the rice.
