Hello family we are very excited for this ramen popup! We will have a Tori Paitan it is basically a chicken version of Tonkotsu. Creamy chicken bone broth! I would usually do a double soup (animal, fish) but I specifically wanted to highlight chicken as mush as possible and use the whole animal out of respect for it, the meat to make chashu, the bones for soup and the fat for schmaltz (chicken oil) of course what’s chicken without egg? Ajitama (ramen egg) is one of my favorite toppings in the endless toppings of ramen. The tare I’m using is a Shio tare which consists of Hawaiian Alaea salt and shoyu among other ingredients. The other ramen I’m doing is a VEGAN RAMEN, so all you ramen heads out there tell you vegan homies to come through! Vegan ramen is a difficult one. A traditional vegan miso ramen is heavily influenced by Japanese Buddhist cuisine called Shojin Ryori. Instead of meat stocks, it relies on layers of umami from kombu, mushrooms, fermented soy products, and vegetables. Traditionally they don’t like using, scallions, garlic, ginger etc. because the flavors are too overpowering to your senses. There’s a whole list of what not to use. All the good stuff in my opinion, who doesn’t love mass quantities of garlic? 😭 so for this one I’m roasting some root vegetables and other light aromatics to make the soup stock to layer the umami flavors. Making a Shiro miso tare that will add funkiness and balance but not being too heavy. Roasting Maitake mushrooms as a topping along with some blanched bok choy. I love blanched bok choy, it’s slightly bitter and I want that crunch! I’m dashing a little of my Karashibi Green spice on top not to be spicy but I want it to awaken your senses with the spice from my dried young green hybrid chilis and the green Sichuan pepper corns. I think it will be a very nice balance of sweet, salty, sour, bitter, umami. Which is the 5 flavors Buddhists have when they eat Shojin Ryori. I wanted the vegan ramen to be well balanced as well and not over power each ingredient. I hope everyone can make it Friday and Saturday I’m looking forward to serving our special ramen this month.

Listen, if you grew up with koolaid in the house then you were just broke enough to be cool. But if you grew up with flavor aid you were trash, but I grew up with my mom taking the packet and putting only a sprinkle in a whole jug of water with a pinch of sugar. Of course it was a used milk jug at that. Mom. You remember what it was called? Flavored water. That’s right. Flavored water. That’s how poor I was growing up. Mayo and cheese on white bread. Now I’m finally able to upgrade to a tortilla with mayo and cheese. Does it ever get easier or do I have to keep pushing? Life just life sometimes and it makes you want to give up. Don’t give up guys, I will share my flavored water and cheese sandwiches with you. Love yall.

TERIYAKI SMASH
Velvety Garlic mayo, yatsume zuke, perfectly seasoned and smashed beef, teriyaki glaze on a toasted bun. It sounds simple but I promise you this will be the new favorite. Yatsume zuke is a Japanese pickled cabbage that we use on our Fried Chicken Sando so if you have ever had it you know what we mean! This burger is exceptionally well balanced and perfect as is. You do not need cheese on it! Come on by and check it out! RAMEN WILL BE ANNOUNCED TOMORROW

I gotta give a shout out to the homie up north his style of art really drew me to have him commission this absolute perfect piece. When I first opened I really wanted to incorporate art with my food. So now every time you come and eat you may notice what your eating on. Go give him a follow, go buy his art it’s all really amazing. Jeff is probably one of my favorite semi local (Chicago) artists in the area. Also a special shout out to because they make it come alive. The quality coming out from them is absolutely insane! Did you know the chilis for the Urbana Hot Fish are ones I crossed myself about 5 years ago? The fish is laced up in a basic hot sauce (which I love) dusted with my Karashibi Red blend (mature red chilis and red Sichuan, among other spices) fermented hot garlic honey, and for the extra hot is a blend of spices and sauces. Come on in and taste what I think is the best version of our fish. Queen of hearts drawing tonight.
