I’m in my bread era.

Smoked Philly Cheesesteak Pretzel
Our house made pretzel bun cut and stuffed with smoked brisket cheesesteak. ‘Nuff said.

Dill Pickle Focaccia
Pickle juice and pieces in the dough, baked and finished with pickle cream cheese. Did I mention, it had pickles?

Both sourdough, both gut friendly, and yes both DTF (diabetic to feed friendly).

Premiering this weekend, our sourdough butter croissant. Sourdough is such an amazing thing to feed diabetics bc the converted starch (from fermentation) becomes useful as acetic acid (slowing down the absorption of blood sugar, thus minimizing blood sugar spikes). This croissant is also made with flaxseed meal and finished with softened butter piped directly into the croissant. Once again, added fiber and fat is our friend!

Mapo Tofu-caccia, house made focaccia topped and stuffed with Mapo Tofu (no meat). She’s vegan, sourdough, whole wheat flour and diabetic friendly! We definitely came clutch with the DTF menu this weekend.

Also, DTF is world play. Geez.

Our DTF menu #3 for this weekend:

One of my biggest complaints about pain au chocolats is the ratio between croissant dough to chocolates. Introducing our Rye Chocolotini, a breadstick shaped chocolate croissant made with rye flour, whole wheat flour and sourdough starter. It has sourdough so you know it’s gut healthy! With the added rye flour and whole wheat grains, this croissant is diabetic friendly!

Also, we will be serving a polish Nectarine Karpatka Cream Cake! Whole wheat flour adds a layer of fiber, slowing blood sugar absorption, and replacing all white devil sugars with brown allulose sugar. This slice of heaven will be in our cold case!

Who’s DTF?!! Our DTF #2 is dropping this wkeend!! We have….

Fig, Goat Cheesecake and Pistachio Cream Cake

Fresh figs layered in a tangerine goat cheesecake, topped and bottomed with pistachio biscuit (bis-squee, that’s flourless in French pastry)

Char Sui Mushroom Quiche

Jiggly cheesy custard, topped with Char Sui Mushrooms (colored and sweetened with Beet juice) baked in a crunchy whole wheat, flaxseed, psyllium husk crust. Served with a side salad.

Double Dark Chocolate (Lily's) Ice Cream Sandwich crusted with salted caramelized cocoa nibbs. It’s hot outside, nuff’ said.

All 3 menu item are diabetic friendly, using ingredient’s that have subbed out white devil sugar for agave, coconut sugar, isomalt, allulose, monk fruit and stevia for its sweetness. Double and tripled fibers and protein for that gym bro obsessed with being “regular”.

Can you tell I’m having fun with this menu?!!
