There’s nothing quite like watching the momentum build.

Over the past several weeks, Canyon Eatery has continued to see growing guest interest and an incredible response from the community. Every full dining room, every returning guest, and every positive interaction is a reminder of why we do what we do.

Being part of this project through Strata Hospitality Group has been an incredibly rewarding experience. From developing the culinary program and building systems to training the team and refining every detail, it’s been exciting to watch the vision come to life.

A huge thank you to the Canyon Eatery team for their hard work, passion, and commitment to excellence every single day. This is just the beginning, and I’m excited to see where this journey takes us.

Here’s to continuing to raise the bar for dining in Southern Utah.

🥃🔥 An unforgettable evening in Southern Utah.

This weekend I had the pleasure of hosting a private bourbon tasting and chef-curated dinner for an incredible group celebrating together in Zion.

Guests enjoyed a guided tasting featuring premium American whiskeys paired with artisanal cheeses, charcuterie, house-made accompaniments, and thoughtful tasting notes before sitting down to a family-style feast.

Experiences like these are what I love most—bringing people together around great food, great spirits, and meaningful conversations in some of the most beautiful places in the country.

Every chef has places that leave fingerprints on their career.

For me, one of those places was my time with the José Andrés ThinkFoodGroup family.

I learned about creativity, discipline, hospitality, and the power of bringing people together through food.

Years later, those lessons still influence every dinner I create through Strata Private Dining.

Grateful for the memories, the mentorship, and the people who helped shape the chef I am today.

The journey continues.
