I'm back in the kitchen this weekend and making two favorites:

🍪 Chocolate Cookie Crumble (Oreo)
Rich, creamy cheesecake topped with chocolate, crushed Oreo cookies and a drizzle of white chocolate.

🍫 Ferrero Rocher
Creamy cheesecake topped with chocolate, hazelnuts and pieces of Ferrero Rocher.

I'll be making a limited number, so if you've been craving cheesecake—or just want something special for the weekend—send me a message and I'll put one aside for you.

It is normally $30, but you can take this one for $25. I can deliver to Coral Springs/Parkland of adjacent area today or tomorrow.

Sometimes you just need cheesecake. 😊

I'm back in the kitchen this week and will be making a small batch of full-size Francis Cakes cheesecakes.

My cheesecakes are made in small batches with a rich, creamy filling that's not overly sweet — then finished with plenty of flavor on top.

I've been a little quiet here lately, but the cheesecakes haven't gone anywhere. 😊

When I make a cheesecake, I'm looking for one thing above all else — that rich, creamy texture that makes you want to go back for another bite.

This is my Vanilla Bean Cheesecake, made with real vanilla bean and plenty of love, finished with a generous layer of dulce de leche and a drizzle of white chocolate. Still my favorite way to make a cheesecake.

Some days are baking days.

Today the mixers come out, the cream cheese softens, and the kitchen starts smelling like vanilla.

The hardest part isn't baking the cheesecake...
It's waiting.

Waiting for it to cool.

Waiting overnight for that silky, creamy texture to develop.

Waiting until it's ready to share.

That's what today is all about.

People often think the hardest part of making cheesecake is baking it.

It isn't.

The hardest part is waiting.

Waiting for it to cool.

Waiting overnight for the texture to become silky and creamy.

Waiting until the flavors have had time to come together.

Some desserts are made quickly.

Cheesecake rewards patience.

That's one of the reasons I love making it.

📖 The Francis Cakes Story

Every journey has a beginning...

Yesterday, my wife and I celebrated our 38th wedding anniversary, and it got me thinking about how Francis Cakes began.

Many years ago, she gave me this cookbook as a gift.
At the time, neither of us imagined it would spark a passion for baking—or that one day I'd be sharing cheesecakes with friends, neighbors, and customers.

The very first cheesecake I ever made came from these pages. Since then, there have been countless cheesecakes, plenty of lessons learned, recipes refined, and more than a few happy taste testers along the way.

Today, I still smile when I see this book. It reminds me that every great journey starts with a single step... or in this case, a single cheesecake.

Thank you to my wonderful wife for the gift that unknowingly helped start this adventure, and for 38 amazing years together. ❤️ Rosa Lezotte
