We are less than a month away from our first ever plant based pop up! I think I have finalized the menu at last. It’s really a compilation of my families favorite things to eat with a bit of pixie dust on top.

So, per my super foodie children, the Monte Cristo returns! This is one of their all time favorite sammiches. And I finally have all the delicious plant based goodness to replicate it properly! ❤️

Some of you know me- Kortnie aka Koko… some even call me Chef Koko. That’s wild for me but they say if the shoe fits wear it. I’m the weirdo responsible for four years of The Bayou food truck menu, one year of What the Vegan?! Pop up menu, a year and a half of Ruby D’s Burger Joint menu, & now back to my very roots - Koko’s Good Eats!

I started out working at McDonalds when I was only 14. I rose through the ranks and worked every single front of house job there was until I was in my late 20s. Until my in-laws restaurant almost closed too soon and my focus was forced to shift to the back of house. I had always had an extremely gigantic passion for cooking and food. But as a lifetime vegetarian, I felt like I just didn’t fit in. But once I entered that commercial kitchen, it was clear to me that’s where I belonged all along.

If you’ve ever been to one of our establishments, you probably only saw me scrambling in the back frantically trying to do too many things, too perfectly, at the speed of light.

I have some pretty gnarly social anxiety at times, which I fail to understand at all… because I also really love connecting with people. I basically don’t make any sense. I’ve had friends tell me I’m ADHD or on the autism scale 🙈 I don’t really know about any of that. I just keep on doing my thing. I have always thrived behind the scenes. I’ve never been one to like any attention on myself. So bringing Koko’s back to life with so many public eyes on us is really outside of my comfort zone. But another thing they say, to truly grow and thrive, one must push themselves into uncomfortable situations. Or something like that.

Anywhooo… where was I going with this?! 🥸
I’m really very excited for this next chapter. I never imagined my husband and I would have so many doors opening for us. Such a giant loving community backing what we are doing. It’s all a huge dream come true. The people that support us and our family…. Gah-lee! I will never be able to conjure up proper words.

Thank you lovely people for getting us here! I’m totally stoked to see what comes next!

One thing that I am really having so much fun with and LOVING about developing this new menu for Koko’s….
Is I can do whatever I want 😂

I don’t have to fit a mold. It doesn’t have to be Italian, Mexican… I don’t have to choose! I don’t have to worry about making Cajun dishes traditional or authentic.

I can literally serve Teriyaki Tacos, Lasagna Grilled Cheese, Elote Fritters, Gumbo & Coconut Shrimp with island rice all on the same menu if I so choose!

This menu will be exactly like me… ALL over the place and wonderfully weird 👩🏻‍🍳🫶🏼

Here’s a wild memory from four years ago today! Our first food truck event we ever did was Koko’s! And shortly after, this food truck traveled all around Oklahoma as The Bayou.

We had ABSOLUTELY NO IDEA the crazy roller coaster we were about to go on! So many huuuuuuge food truck events. Winning Best Food Truck in Tulsa two years in a row?! Competing in the Oklahoma Food Truck Championship!? Ourselves going VEGAN. And then putting our big Bayou adventure to a screeching hault. To opening up Tulsa’s first 100% plant based diner!? Opening The Bayou back up plant based?! And now getting all the way back to where it all began…. Koko’s!

That is totally nuts! And we cannot believe how much we have done in only four years!!! We would have never in a million years guessed any of this. But clearly we knew BIG things were heading our way. “We are pretty exhausted already! But now.... It’s GO time!”

Dream until your dreams come true. And so we did 🤩

Let’s talk about one of our favorite dishes of all time - THE LGC!

The Lasagna Grilled Cheese
The first elaborate recipe I ever perfected back when I was just a teenager was this ridiculously amazing lasagna. Like all things we do we had to find a way to make it wacky and weird so we stuffed it in between some garlic toast and made it into a grilled cheese!

This sandwich probably has its own secret underground fanclub that’s going to be thrilled to see its return!

The fact that we can veganize this big boy without comprising any flavor is just SO FRIGGIN COOL!

Before we had our first ever brick and mortar restaurant… before we had an award winning food truck… before our pop up at Mother Road Market… we were just a pair of scrappy, broke parents trying to figure out how to make it in this new Covid 19 world.

We had always dreamed of opening up our own restaurant. And one day we just decided to stop dreaming and started doing. We had no idea how to start the big dream. So we just started with whatever was right in front of us. We created a page, we put together weekly menus with a few things we loved to cook. We loaded up a catering bag, and peddled our goods to fellow friends in the service industry and family all over Tulsa.

In June 2021, Koko’s Good Eats was born ✨
