Delicious food, super excellent value, plant based options, and a very big and lovely tree to enjoy it all under. But our favorite part is the excellent customer service and love. From one husband and wife food truck super duo to another- thank you for your hospitality 🖤

Once upon a time, four years ago next month actually, we closed down our original concept. Our first ever food biz baby to put all of our efforts into The Bayou- which has been an incredible and super wild adventure!

And although we have The Bayou on hold right now while we explore its next chapter… we will be starting another series of pop ups…

Koko’s Good Eats! Our original concept, near and dear to our hearts. We thought this had been laid to rest only to serve as a memory of where this all began. But Mother Road Market has invited us to bring it back to life! And of course… we converted it all plant based.

So if you like the food we cook up… come see us at our next pop up where we will be crafting some of our absolute favorite wacky and weird dishes- very authentically us! Lasagna Grilled Cheese, Monte Cristo, Birria Melt, maybe some eggrolls and pasta dishes. Stuff that speaks to our hearts 🫶🏼

Thank you all so much for making this last pop up a wild success! We dished up so many plates filled with love! We all had SO MUCH FUN too! And we can’t express how much gratitude we have for yall coming out to support us this season!

The last time we closed out a concept in this kitchen… it led to us opening up our first ever brick and mortar and we are thrilled to say Ruby D’s is thriving! Now to find a forever home for The Bayou…

Thank you Mother Road Market and Kitchen 66 for giving people like us a platform to chase our dreams! Without you, we wouldn’t be where we are today 🥰

Our number one best seller and our signature dish!

Crispy sidewinder fries topped with our chicken and sausage gumbo, parmesan, signature remoulade sauce, green onions, parsley and topped with some blackened shrimp!

We’ve sold thousands of these all across Oklahoma!

Today is our last pop up! And then we go searching for our forever home 🖤

There are people on the internet saying they deliberately refuse to support us because we went plant based.

👋🏼Business goes plant based to reduce their footprint, contribute to repairing the environment, and stand against animal cruelty and against carcinogenic food. And we get boycott for that.

It’s wild! When we learned that if we keep going at this rate… our children won’t have water.

Won’t. Have. Water.

It was a REALLY immediate and even easier decision. There’s nothing on this Earth we wouldn’t do for our children. Including giving up our sole source of income (at the time) and alienating half of our customer base. So we took our tools and used them for good instead of evil.

Anyone that doesn’t want to support that, we didn’t need that business anyway.

It’s crazy how backwards this world can be.

WE’VE GOT ANOTHER NEW DIP!

⚜️Ruth’s Special

Long before the Bayou had the Debris Dip, we were at SwampHouse with the Drip Beef. Which was a long time family recipe from the boss’ Grandma Scott aka Ruth

So we kept it simple, just like she would serve it with mustard & pickles, and we added a little American cheese to finish it off!

Come and get it this weekend during our last pop up! We will be here Friday through Sunday 11-9!

Grande Manzo 🤌🏼
Ever since we discovered Chunk we’ve reeeeally want to do an Italian beef sammich. So we threw some of our scratch made tapenade on it and sprinkled some parmesan and p**f! Magic was born!

It’s toooootally our new favorite dip. And bonus - it’s named by our clever daughter! We were struggling to name it and she goes “just name it ‘big beef’ in Italian.” 👀🤯

Come get it this week during our last pop up!
