This week we are sharing a recipe for Salted Caramel Banana Bread!

Ingredients
1/3 cup packed brown sugar
2 tablespoons butter, melted
1/4 teaspoon sea salt
1 small banana, sliced lengthwise (or into coins)
1-1/2 cups all-purpose flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 cup mashed ripe bananas (about 3 medium)
1/2 cup egg substitute
1/2 cup canola oil
1/2 cup fat-free sour cream
1 teaspoon vanilla extract

Directions
Preheat oven to 350°. In a greased and floured 9x5-in. loaf pan, combine brown sugar, butter and salt. Arrange two slices of banana over top, cut sides up; set aside.
In a large bowl, combine the flour, sugar, baking soda and salt. Combine the bananas, egg substitute, oil, sour cream and vanilla; stir into the dry ingredients just until moistened.
Pour into prepared pan. Bake until a toothpick inserted in the center comes out clean, 55-65 minutes. Let stand 10 minutes before inverting onto a serving plate.

1 piece: 285 calories, 11g fat (2g saturated fat), 5mg cholesterol, 289mg sodium, 42g carbohydrate (27g sugars, 1g fiber), 4g protein.
