Mind is still spinning.....
Did we really sell 100 RACKS OF RIBS IN 52 MINUTES yesterday?! 🤯
Yes. Yes we did.
Am I happy? ABSOLUTELY.
Was that feeling extremely short-lived because I spent the rest of the afternoon and late into the night thinking about what I could've done better? ALSO YES.
I kept thinking about the people who stood in line for 45+ minutes, IN THE RAIN, only for us to sell out before everyone could get food.
That's the double-edged sword of this game.
Earlier this year, I realized BNE had a problem. A GREAT problem to have...but a problem nonetheless.
DEMAND.
That's one of the biggest reasons I created the BNE VIP Membership.
VIP allows you, as a member of the BNE FAM, to guarantee your order through preorder. But just as importantly, it gives ME, as the owner and operator, real numbers that allow me to properly plan production and come as close as possible to taking care of everyone.
Because here's the other side of it...
Running a business responsibly is how we STAY in business.
Imagine if I would've cooked another 50 racks yesterday hoping someone would show up and buy them...and they didn't.
That's not just leftover food. That's hundreds of dollars in product, hours of prep, wood, fuel, labor and time that BNE has to absorb.
A few trips like that and you wouldn't just "not see BNE next week"...
You wouldn't see BNE at all.
And for anyone who thinks I'm doing this because BBQ is some quick road to getting rich—I encourage you to price quality proteins right now and then fire up a pit. 😂🔥
What makes BNE different also makes this difficult.
This isn't dropping something frozen into a basket of grease and handing it through the window five minutes later.
This is trimming. Seasoning. Fire management. Smoke. Rotation. Resting. Holding. HOURS of preparation before the first customer ever walks up to that window.
LOW N SLOW. FRESH. EVERY TIME.
I understand that business model puts limitations on what we can produce.
But it's the business model I chose.
It's the quality standard BNE was built on.
And we're sticking with it.
So to EVERY SINGLE PERSON who came out yesterday, stood in that rain, bought a rack, shared the post, told a friend, or continues showing up every time you see that trailer...

But instead of looking at it and saying, "Look what we did," I'm looking at it asking...
"How do we do it better next time?"
