Happy Labor Day.
When I think about this holiday, one of the few we take off, I think about the people who show up in the morning and turn an empty kitchen into Honey’s. The prep lists. The deliveries. The endless chopping and sauce mixing and breading and frying. The lunch rush that arrives all at once. The printer that absolutely will not stop printing, and then abruptly dies for no reason. The cleaning at the end of a long day, when everyone would really rather just go home.
And then we come back and do it again.
I get a lot of credit for Honey’s because my name and face are attached to it. But the older this business gets, the more aware I am of how little of what we do here is accomplished by me alone.
Honey’s exists every day because a group of talented, high-functioning, funny, exhausted kitchen weirdos have decided to care about it. They care whether the chicken is right. They care whether the fries are hot. They care when somebody has waited too long. They notice when something isn’t working and make it better. They’ve learned how to move around one another in a small space while producing a frankly ridiculous amount of food.
Most importantly, they’ve taken something that started as my idea and made it ours. That means more to me than I’m probably very good at expressing.
Restaurants are hard. They’re physically demanding, repetitive, often chaotic places to work. And yet, this crew makes Honey’s a place I genuinely look forward to walking into every day. I trust them. I admire them. I’m enormously proud of what we’ve built together.
So on a holiday intended to recognize the people who do the work, I want to recognize mine.
To everyone who has sweated through a broken air conditioner, had outrageous things said to them at the counter, scraped burnt Cherry Coke out of a pot, figured out where to store garbage when the dumpster is overflowing, covered a shift at the last minute, solved a weirdo problem, made somebody laugh their way out of the weeds, or simply showed up and gave a damn:
Thank you.
Honey’s is better because you’re here. And there is absolutely no Honey’s without you.
