It’s BLUEBERRY RECIPE TIME


  • LEMON BLUEBERRY MUFFINS

  • Preheat oven to 375 degrees and line a muffin pan with 8 muffin liners.

  • Juice and grate one lemon and retain the juice. Add the zest to a bowl with 1 and 1/2 cups self rising flour, 1/2 tsp. baking soda, 1/2 tsp. salt, 1/2 cup granulated sugar.

  • Beat 3/4 cup milk, 1 beaten egg 1/3 cup vegetable or sunflower oil and lemon juice in a bowl, then pour the wet ingredients into the dry and stir until just combined.
