November is Sweet Potato Awareness Month. This vegetable is popular in holiday dishes, but also boasts high fiber, antioxidants, beta carotene and potassium. Try out Zoe's Roasted Sweet Potato Sticks for a delicious way to serve sweet potatoes.
Using a sharp knife, slice the potatoes into thin pieces. Toss with olive oil and sprinkle with a dash of salt. Spread the sweet potato sticks on a baking sheet in a single layer.
