Today we celebrate Tequila Mijos!!!
Tequila originated in the Mexican state of Jalisco, where the Indigenous peoples fermented the sap of the agave plant long before the Spanish arrived. In the 1500s, Spanish settlers introduced distillation techniques, transforming fermented agave into a stronger spirit. By the 1700s, tequila production had become a thriving industry, with families like the Cuervos helping establish commercial distilleries.
Today, authentic tequila can only be made from 100% Blue Weber agave grown in designated regions of Mexico, primarily Jalisco, and it is protected by a Denomination of Origin—similar to Champagne in France. Tequila has evolved from a local tradition into one of the world’s most celebrated spirits, prized for its craftsmanship, heritage, and rich connection to Mexican culture.
