For 40 years I taught people how to cook.

Good technique. Good ingredients. Good flavor. That was the standard, and by most measures, I met it.

Then I went back to school. And I realized I had been teaching only half the question.

The question I had been asking: does this taste good?

The question I should have been asking: what is this doing to the body that eats it?

Those are not the same question. And once you hear the second one, you cannot unhear it.

Every ingredient has a profile. Every taste carries an instruction. Every recipe is a conversation between the kitchen and the body, and for 40 years I had only been listening to one side of it.

You have been eating medicine your whole life. You just did not have a name for it.

Every ingredient belongs to one of six taste categories. Each one carries a specific physiological instruction, not about flavor, about function.

Sweet builds. Sour activates. Salty enhances absorption. Pungent ignites. Bitter clears. Astringent completes.

When all six are present the body registers the meal as done. When any are missing, especially bitter and astringent, the body keeps asking. That after-dinner reach is almost always this.

Twenty years. A converted Airstream. Farmers markets, restaurant collaborations, the Sioux City Art Center. Organic food across the Midwest before most people knew what that meant.

The Sproutstream was not sophisticated. It was a kitchen on wheels at a farmers market in Iowa.

But the people who ate from it felt different. They could not always say why. They just knew something about the food was doing something the food from everywhere else was not.

They did not know about Ayurveda. They did not know about Agni or the six tastes or Ojas. They knew they felt better.

That is the lesson I carried out of twenty years of that Airstream: the vehicle does not matter. The kitchen does not have to be impressive. The framework behind the food is what does the work.

The most sophisticated culinary system in the world serves no one from a textbook. It serves people from a kitchen, even if that kitchen is on wheels at a farmers market in Iowa.

There is a specific kind of tired that is not fixed by sleep.

You wake up tired. You go through the day tired. You push through because stopping feels worse than continuing. And somewhere in the back of your mind you know you are running on something that you have not refilled in a long time.

That is what Ayurveda calls depleted Ojas, the vital reserve. And Shatavari is one of the primary herbs for rebuilding it.

Asparagus racemosus. A Rasayana herb, the category in Ayurvedic medicine for substances that promote longevity, vitality, and deep tissue restoration.

In Western Herbology: an adaptogen that documents cortisol regulation, hormonal balance, and physical recovery. Both traditions describe the same population: people who have been running too hot, too fast, for too long.

In the kitchen: warm milk, half a teaspoon of Shatavari powder, a pinch of cardamom, raw honey after the heat is off. Before bed. Every night. The body builds Ojas while the nervous system is finally still.

Note: the milk works best warm and on its own. Ghee, if you add it, is a clarified butter, not a seed oil, and helps carry the herb's compounds into the tissues.

It is constitutional data, and the food that corrects it is specific to which one you are.

Vata under stress gets anxious, scattered, and overwhelmed. The body is asking for warmth, grounding, and regular meal timing. More ghee. Consistent rhythm.

Pitta under stress gets angry, inflamed, and drives straight toward burnout. The body needs cooling, no skipped meals, and bitter and sweet tastes to bring the fire down.

Kapha under stress withdraws, overeats, and disengages slowly. The body needs stimulation, warming spices, lighter food, variety, and ideally eating with other people.

None of these are character flaws. All of them have a specific dietary correction.

Most wellness programs serve food that looks healthy.

A much smaller number serve food that actually does something.

The difference shows up in how people feel when they leave; not at the table, but an hour later. The next morning. On the drive home from a retreat.

When the food is built with constitutional intelligence, seasonal awareness, and the right tastes in the right sequence:

Guests don't just leave full. They leave nourished. Teams don't just eat lunch. They return to their afternoon with actual clarity. Retreats don't just feed people between sessions. The food extends the transformation into the body, it becomes part of the work, not a break from it.

That is a different outcome. And it is not accidental. It is designed.
