Ybor City is celebrating its 140th anniversary, so we were proud that Great Day Live Tampa Bay recently invited Columbia's fifth generation caretaker Andrea Gonzmart Williams to demonstrate the Ybor classic, Chicken and Yellow Rice.

Not only is it a staple of the menu at Columbia, which is celebrating its 121st year in business owned for five generations of the same family, Andrea makes the dish frequently at home!

On Memorial Day 2026, we encourage visitation of Hillsborough County’s beautiful Veterans Memorial Park and Rear Admiral Leroy Collins, Jr., Veterans Museum at 3602 Highway 301 N., in Tampa.

The park and museum were established to provide a centralized location to which all citizens and visitors could memorialize and honor the Veterans of all eras.

The park’s 14 war memorials currently include:
* Iraq
* Afghanistan
* Korea
* Vietnam
* World War I
* World War II
* Spanish-American
* Fallen Heroes
* Committed Forces

The park also serves as a grounds for regional ceremonies on Veterans Day, Memorial Day and Patriot Day.

It also is a beautiful location for reading, reflection, meditation, picnicking, gathering as a family or walking/jogging along the many paths and fitness stations, including the Tampa Bypass Canal Trail.

All Columbia Restaurant locations will be open regular hours for Memorial Day.

Croquetas de Jamón
Beloved Spanish tapa consisting of six croquettes made with a creamy, savory béchamel sauce filling with finely diced ham and deep-fried, golden-brown exterior and a soft, molten center. Served with Columbia hot sauce.

R.G.’s Boliche Sandwich
Thin slices of Boliche, the traditional Cuban pot roast slow-roasted Eye of Round beef, stuffed with chorizo. Layered with pickled onions and flavorful gravy on Cuban bread. Served at lunch with plantain chips.
