Leaning into the flavors of a local summer at our weekly Friday Night Chef’s Table.

Ripe figs, local watermelon, candy roaster squash, herbs from the garden- these are the ingredients that have been telling the story of our Friday nights lately.

Our Chef’s Table menu changes with the season, and often with what looks best that week. A few favorites from the last few dinners:

We’re growing our dining room service team. 🍷

Damas is looking for an experienced server to join our small, hospitality-driven team at Goodwood Museum & Gardens.

We’re looking for someone who genuinely enjoys taking care of people- someone warm, curious, detail-oriented, and comfortable working with a thoughtful food and wine program. Because our dining room is small, this is a hands-on role where everyone contributes: we move with purpose, support one another, and take shared ownership of the guest experience from opening through closing.

Required availability includes Wednesday, Friday & Saturday lunch, with additional availability for select evening services and events strongly preferred.

Previous experience in elevated restaurant service is required. An interest in food, wine, local agriculture, and continuing education is a big plus.

A few new stars on our lunch menu:

The Tomatoland BLT has officially earned a permanent place on the menu- local tomatoes, Berkshire bacon, basil mayo and toasted sourdough just like you remembered it.

Also joining the table: organic lamb meatballs with Israeli couscous, grilled summer zucchini and a caper olive gremolata; and our smoked fish dip with grilled bread and plenty of house made pickles.

Come for lunch, stay for a bottle.

Life, lately at Damas.

A very full few weeks around here and we’re grateful for it.

Thank you to everyone who joined us for Tallahassee Restaurant Week with Visit Tallahassee and Jennifer - Food Community. We loved welcoming so many new faces around our tables.

Behind the scenes, we’ve been preparing for a new season at Damas, welcoming new members to our team, launching Damas Wine Club, and working on what comes next.

On the table, summer continues: new dishes, plenty of local tomatoes, and the Tomatoland BLT officially earning a permanent place on the menu.

And somehow, despite the heat, the garden is still going strong.

Long before Damas became the restaurant it is today, Chef Katie Spetman and I spent years dreaming up intimate pop-up dinners together. Next Thursday, we’re bringing that collaboration back to the table for one special evening at Food Glorious Food.

Together we’ll explore the wines of Alois Lageder, one of the featured wineries in our inaugural Damas Wine Club collection, paired with a beautiful five-course menu created by Chef Katie. We’re also honored to welcome Clemens Lageder, representing his family’s iconic Alto Adige estate, who will share the history, philosophy, and wines that have made Alois Lageder one of Italy’s most respected producers.

If you’ve been curious about Damas Wine Club, this is a wonderful opportunity to experience the kind of storytelling, thoughtful wine pairings, and sense of place that inspire our monthly collections.

As we wrap up our summer break, we’re ready to return to our own kitchen with fresh inspiration and a renewed appreciation for letting the ingredients lead the story.

Over the past two weeks, we’ve wandered farm stands, cooked without recipes, filled notebooks, and embraced a simple philosophy: less is more.

We’re excited to bring those ideas home as we reopen this Friday with a brand-new lunch menu inspired by the season.

We can’t wait to welcome you back to Damas.

We reopen this week with lunch service on Friday and Saturday, followed by our weekly Friday Chef’s Table dinner on Friday evening. Reservations are available on Resy.

One of my favorite parts of our summer break is slowing down enough to cook without an agenda.

No menu deadlines. No service. Just local ingredients, a notebook, and the freedom to play.

Today’s experiment started with a basket of Sungold tomatoes from Hearty Roots Farm & Market and a classic Spanish snack to enjoy during today’s World Cup match.

Over the next few days, we’ll be filling notebooks, visiting farms, tasting wines, and collecting ideas to bring back to Damas when we reopen.
