It is with deep sadness that we share the passing of our founder, my father, George Koikos. For more than half of a century, he poured his love, hospitality, and unmistakable charisma into Georgio’s Fine Food & Spirits and into the Tallahassee community. He was a man whose smile lit up every room, whose warmth made every guest feel like family, and whose love for people shaped his restaurants for more than fifty years.
We have seen many of the news stories, the posts, and the beautiful tributes from our guests. Thank you. The outpouring of love and support from our beautiful community is more than we ever imagined. Our hearts are lifted, and your words remind us of just how many lives he touched.
We want to reassure everyone that Georgio’s Fine Food & Spirits will continue on, just as George wished. For over thirty years, I have worked alongside my father learning every part of the restaurant business. Executive Chef Grant Beane has been with Georgio’s for more than three decades, our assistant manager Taylor Anderson for over fourteen years, and many of our long‑time team members have been with us for years. Alongside his loving wife and business partner of more than 50 years, Karen, we will proudly carry his legacy forward together.
Years ago, my father stepped back from daily operations and entrusted me with leading the restaurant. He continued doing what he loved most: visiting tables, talking with guests, making the best avgolemono soup in the world, offering guidance, and keeping a close eye on the place he built and loved. That spirit will always live here.

I will be more present in the dining room, alongside Taylor, continuing the tradition of hospitality George made famous. We cannot replace him — no one ever could — but we will honor him every day by serving the exceptional food he insisted on, by keeping Georgio’s the warm, welcoming place he created, and by continuing to build on the legacy he leaves behind.
