Mexican food meal prep!

Since it’s basically impossible to get La Fiesta queso anywhere in town, I have to make my own.

Believe it or not, queso reheats really well after being frozen. I freeze the finished product in silicone molds, and then I vacuum seal before storage.

This kind of thing would be great in a La Fiesta cookbook!

Out and about in Tallahassee tonight and I’m seeing full restaurants and lots of people from out of town.

This is the kind of event that really makes me miss the restaurant business. Being there for people who are scared, and stressed, and dealing with uncertainty. THAT’s what hospitality is all about. It was our privilege to give people a home away from home for so long.

And although we aren’t there for you anymore, I want to tell you that we miss you, we love you, and we hope you’re safe. Be patient with your local restaurants this week, they’re doing their best to take care of people who are going through a lot.

Wishing a very happy birthday to the boss himself! Here we see Pedro posing with his wife Jana (the other boss), about to enjoy a glass or two of birthday wine.

They are both doing great. Pedro is staying busy with a never ending list of things to do around the house. He also spends lots of time at the gym, and visiting with his buddies here and there across town. Jana is also staying busy, she’s now a realtor serving Tallahassee and surrounding areas.

If you see Pedro out anytime in the next week, make sure to wish him a happy birthday! And if you’re looking to buy/sell, reach out to Jana Hernandez (of Armor realty), she’s great!

(As for me, it’s my birthday in a few weeks, and I’ll give you an update then)

Happy Valentine’s Day to everyone out there!

Today is a bitter sweet day for me. On one hand, it’s nice to not work a Valentine’s Day dinner shift (first time in 10+ years). But on the other hand, I truly miss seeing the happy couples.

For the last decade at Fiesta we were absolutely PACKED on Valentine’s Day. Initially, I was surprised because that wasn’t always the case. But when I started talking to our customers I started to understand why. There were SO MANY stories about first dates being here. And stories like “this is where I found out I was going to be a father”, or “we had our wedding rehearsal here”. All of those people came back year after year, to re-live those beautiful moments.

On our last Valentine’s Day we had decades worth of people coming back to re-live those moments. The love that you all shared with us in that building was a beautiful thing. Thank you so much for those memories. Have a great night!

I love this picture. This was taken about 2 years ago, back when the lemon tree was healthy and alive.

It was a typical night. The parking lot had cars as far as they eye could see, the patio was full of happy people (and happier dogs), incredible food was being served, and everyone felt like family.

Thinking about nights like this make me feel whole again. I miss everyone terribly and I’m sorry that I’ve been radio silent. I thought it would be easier to say goodbye if I didn’t interact on social media, but I really want to update you on how your Fiesta family is doing. In the next few weeks I’m going to give you some fun updates about you’re favorite people from Fiesta and what they’re up to now.

I hope everyone is having a great start to 2023, talk to you soon!

Happy Friday everyone!! Just wanted to share a couple of photos from our last night at Fiesta, this was right before Carly gave out her “paper plate awards”. What a great memory.

A few updates: I know lots of you are missing La Fiesta, and have been especially vocal about the Jalapeño Ranch. We do still have plans to work with a distributor to bottle it and will keep you posted when you know about that time line.

Also, everyone is officially employed! Quite a few of my crew took some time off of work (it was a much needed break after how busy we have been) but everyone is now working again. They are all happy with the change, and their new jobs are offering a schedule that is letting them spend more time with family.

And finally, my folks are enjoying retirement. There is a degree of boredom, but I think that’s normal after how busy they’ve been their whole lives. It’s nice seeing them live stress-free. They have enough projects around the house to keep them busy for a while, and it’s pretty darn cool seeing them travel and enjoy themselves.

We miss you all. I especially miss having a place I could go where everyone felt like family, a home away from home. I hope you are all out there thriving, and happy, and enjoying time with your loved ones. Stay safe amigos.

La fiesta dishes out in the community!

La Fiesta Tallahassee was kind enough to donate to the American Legion Auxilary Unit 13 on behalf of Tallahassee Veterans Village some of their dishes to help our veterans stock their kitchens. Thank you for your kindness. La Fiesta will live on through our local veterans!
