Enchiladas Michoacana

Two pan-fried corn tortillas dipped in chili sauce & filled with carrots, potatoes and asparagus. Topped with guajillo chile salsa, romaine & heirloom tomatoes. Served with black beans and red rice & garnished with cilantro and queso fresco.
