Sure, you’ve heard of a coffee b**r, but a b**r coffee?!? Co-Fermented with hops?? Yep! Let us introduce SESSION IPA...
Sebastian Ramirez is an innovative coffee producer at El Placer farm in Quindio, Colombia. We were lucky enough to get our hands on a microlot of Pink Bourbon that underwent a honey process and extended carbonic maceration with hops and lemongrass.
After harvest, the cherries underwent carbonic maceration on CO 2 for 100 hours. The coffee was then depulped, leaving the mucilage intact, and returned to sealed fermentation tanks with hops and lemongrass for an additional 100 hour carbonic maceration before drying on raised beds.
We roasted this one light with a shorter development time to retain as much punchiness in the coffee as possible. The result is a WILD ride of super-bright lemon zest, pine, Mosaic hops, grapefruit, and candied ginger. Just the aroma of a pour-over is insane!
