Every once in a while, an idea comes along that feels bigger than any one organization.

Feed Forward Kids Camp is one of those ideas.

Restaurants have always been about more than food. They're where people learn to solve problems under pressure, work as a team, create something with their hands, and discover that taking care of other people can be incredibly rewarding.

For one day, kids will learn from Tacoma's chefs, cooks, bakers, and hospitality professionals as they rotate through hands-on stations in a real restaurant. By the end of the day, everything they've prepared will become a free community banquet, open to anyone who wants to pull up a chair.

This isn't about creating the next generation of chefs.

It's about creating the next generation of neighbors, leaders, volunteers, and community builders. If a few future chefs come out of it too, we'll take it.

We're just getting started, and we'd love to build this alongside the people who make Tacoma's food community so special.

Applications are now open for young chefs, restaurant partners, volunteers, and sponsors. If you'd like to be part of it, we'd love to hear from you.

Saturday is Independence Day.

If I'm being honest, it's a holiday I've had complicated feelings about for a long time. Not because I don't love this community - I do, fiercely. That's exactly why it's so hard to celebrate while watching so many people in it struggle.

When I opened Manuscript, I wasn't trying to build just another restaurant. Tacoma already has plenty of good ones. I was trying - and still try every single day - to build the kind of place I wanted to exist in Tacoma.

A place where everyone belongs. Where q***r folks know they're welcome. Where immigrants are valued. Where conversations happen across the table instead of across comment sections. You know... the kind that leave you feeling more connected instead of more exhausted. Where we take care of one another, even when we disagree.

That vision hasn't changed. But this has been one of the hardest seasons I've experienced as a business owner.

Sales are down. Food costs keep climbing. In just the last few weeks, a case of romaine lettuce has nearly tripled in price.

The truth is... I'm scared sometimes.

I'm responsible for making payroll, paying vendors, keeping the lights on, and taking care of the people who've trusted me to build this place with me. Some mornings I look at the numbers before I unlock the doors and wonder what the next surprise will be. There is always another fire to put out.

Then we make pasta from scratch. We prep brunch. We make the best NY wh***ey sour you've ever had. We welcome people in. Because I still believe places like this matter.

I'm not asking for sympathy. I'm sharing this because places like Manuscript only survive when people choose them.

One meal. One conversation at a time.

I don't think loving your community means pretending everything is okay. I think it means caring enough to want better for it.

So on Saturday, that's exactly what we'll be doing. We'll be serving brunch from 9 AMโ€“2 PM, then closing for the afternoon and evening so my team and I can spend time with the people we love.

He believed great food didn't need to be complicatedโ€”just honest, made with care, and shared with people worth lingering over.

Weโ€™re proud to officially launch Epilogue Kitchen Collective and The Footnote Project.

Epilogue is a newly approved commissary kitchen and collaborative culinary workspace operating out of Manuscript during our off-hours โ€” created to support independent food businesses, pop-ups, and mobile food vendors in Tacoma.

Built directly into that model is The Footnote Project:
a community meal initiative focused on preparing and distributing free meals throughout Tacoma for under-resourced and food-insecure neighbors.

Our goal is to create an experience that blends elements of a full-service dining experience, test kitchen, and community gathering space โ€” all offered free of charge and with no questions asked.

Additional meal distribution will take place through community centers, public parks, and shelters throughout Tacoma.

The vision has always been simple:
create a kitchen that continues serving people even after restaurant service ends.

We believe food can create opportunity, dignity, connection, and care โ€” and we believe restaurants can play a bigger role in the communities around them.

After a long process, weโ€™re excited to finally bring this project to life.

Now accepting commissary users who vibe with what weโ€™re doing.

HAPPY MOTHER'S DAY! ๐Ÿฅ‚

We're excited and ready for today, but I'd like to take this moment before we open today to remind everyone that this fantastic team of weirdos are - in fact - still humans, not robots. We make everything from scratch and we take pride in every piece of it. But on days like today, where we're damn near overbooked, mistakes are bound to happen. We put our entire hearts and souls into this ridiculous thing we call hospitality but at the end of the day, no one can be perfect at every moment.

If you're celebrating mother's day with us, or at any restaurant really, please PLEASE remember that there are real life humans behind the dishes and drinks and the smiles that you get to experience today. Give them grace. We all want it to be perfect for you. And humans aren't zeros and ones - we contain multitudes ๐Ÿ˜‰

We're in full support of everything is doing locally & will help with the cause wherever we can - closing on a Friday just isn't a thing this small business can do when COGs, rent, & labor are so high. So please consider all your small & local businesses & the effects these kinds of things have on the little guy. Most of us support the efforts *and* we simply can't close & stay alive ๐Ÿ’œ
