This evening we got the opportunity to cater for an ACT prep class in Tecumseh at Johnson County Central High School! The menu was:

This upcoming weekend Sam has a little bit of an eclectic menu - mostly because she had a moment & ordered corned beef for Oktoberfest- then realized that whoops that’s more Irish than German. 🤦🏻‍♀️But we’re going with it. Turning it into a absolutely delicious, filling Corned Beef & Cabbage Loaded Baked Potato with a German style spread featuring stone ground mustard, smoked paprika & sweet relish.

Yesterday evening we had the honor of preparing a pasta bar with scratch made sauces, bruschetta, baguettes, Italian bread, garlic butter & meats for a couple’s wedding day in Seneca, KS. From our count we served 268 plates in just under 2 hours. My crew worked hard & everything went very smooth. It was a blast! The only items not scratch made where the gluten free meatballs & the noodles 🤩 Congratulations Eddie Aldrine & Heinen

I absolutely love providing variety to everyone during festivals & events, however I know that I can only work as quickly as my grill allows at peak service. Starting in 2027 I am considering changing my food truck menu to a permanent menu with Cubans, Smoked French Dips, BBQ Smoked Pulled Pork Sandwiches, dressed up pickles, seasonal smokey cheesecakes & maybe 1 special for the event. (Basically removing chicken from the menu & most of the variations of sandwiches/potatoes to make it easier/quicker for me to get out the window because there wouldn’t be as many options)
My question is: If you’ve been a coordinator or FBK fan with me at the food truck - would this change in menu detour you from inviting me back?

Behind the scenes with Chef Sam: Part 4 (I think)

Something not often thought about when enjoying our gourmet eats is the fact that Sam makes the majority of the sauces from scratch! This will be the Smoked Garlic Aioli that’s featured on FBK’s loaded baked potatoes & steakhouse dressed-up pickles! Yum!

Sam can’t tell you how excited she is to be joining this festival this year!!! We are starting the day off with our mouth watering breakfast loaded baked potato which will be available ALL DAY! (Or until sold out) starting lunch service at 11am. Come see us for your fix!

Fall is a favorite time of year for the community of Hiawatha! Celebrate the season with the annual Maple Leaf Festival!
