Day 9 of the Great New York State Fair! 🎡

If you’ve ever pulled up to the Fair Deli Food Truck, chances are you’ve been greeted by this woman, my mom Annie, holding down the front like it’s her calling.

Her whole philosophy? Kill ’em with kindness. Every single time, no exceptions.

Our first year at the Fair, it was just her out front working the register solo all day, every day with a handheld device.

Now during peak hours we can have eight people working outside alone between three registers, expo and everything else that goes into keeping the front moving. She’s the one running that entire front team and somehow keeping everything moving day after day.

It’s pretty wild to think about how much this operation has grown since that first year, but one thing hasn’t changed. She’s still out front killing ’em with kindness.

So grateful to call her my mom and my teammate. ❤️

One last State Fair post because this whole thing still doesn’t feel real. 🥹🎡🍪

A couple weeks ago, Midway Magic didn’t even exist.

I went to the State Fair, tried a Fruity Pebble-covered fair food, came home inspired, and thought… what if I turned that idea into a cookie? 😂

So I did.

Somehow that little idea turned into an email saying the Fair Deli team loved them… which turned into a message asking if I could make 250 cookies.

I genuinely stared at my phone like… 250???? ME???? 😂

Then came mixers going nonstop, trays everywhere, more Fruity Pebbles than I ever want to see again 😂, a very long baking day, and the biggest order Klo’s Farmstand has ever taken on.

But I did it.

250 Midway Magic cookies baked, decorated, packaged and headed to the New York State Fair. 🥹

And then came the part I don’t think will ever feel completely normal — seeing the Fair Deli crew holding my little Klo’s Farmstand bags, walking around the fair knowing my cookies were actually there, and eventually getting to buy one of my own cookies at the State Fair.

A cookie I had dreamed up days before.

At the freaking New York State Fair. 😭🎡

But the coolest part of this whole thing wasn’t even the 250 cookies.

It was someone with a much bigger, established business looking at my tiny new one and saying, “let’s give her a shot.”

Zac and the entire Fair Deli crew — thank you for doing exactly that. Thank you for trusting me with something this big, hyping up my cookies, and being so willing to support another small business. That meant more to me than you probably realize. 🤍

Klo’s Farmstand is still so new, and I’m still figuring this whole thing out as I go, but this experience taught me something I really hope I don’t forget:

Make the cookie. Send the message. Introduce yourself. Say yes to the scary opportunity.

Because sometimes the thing you’re convinced you’re not ready for becomes the coolest thing you’ve done yet. 🥹

From an idea → to Klo’s Farmstand → to the New York State Fair.

I’m keeping that one forever. 🤍🎡

Day 7 at the Great New York State Fair! 🎟️🎡

I wanted to share the story behind something new we’re selling at the truck today because I thought this was pretty cool.

Anyone in this business knows that people get ideas from each other all the time. It’s just part of the industry. A few days ago, the owner of Klo’s Farmstand, a young entrepreneur out of Savannah, reached out to me because she had tried our Pebble Pop and wanted to make a Fruity Pebbles cookie inspired by it. Before she did, she actually asked me personally if I was okay with it.

I really respected that. You don’t see that very often.

I remember when Fair Deli Food Truck was just getting started and the people who gave us opportunities and believed in what we were doing. We definitely weren’t always the operation we are today, and I haven’t forgotten what it was like to be starting out.

So not only did I tell her absolutely, I ordered 250 cookies from her.

She named the cookie Midway Magic, and somehow her and her family got all 250 made in basically one day and delivered them to me at the Fair around midnight last night.

Starting today we’ll have them at Fair Deli Food Truck for $5 each, and we’re donating the proceeds to Ronald McDonald House.

The cookie is awesome, but I think the story behind it is even better. I have a lot of respect for someone young who’s willing to work that hard and put themselves out there.

There’s enough room for all of us to win, and I’ll always support someone who’s trying to build something of their own.

There are a lot more faces that aren’t in this picture, but every single person on this team plays a part in what we’re doing out here.

Long days, late nights, a little chaos, and a whole lot of work behind the scenes.

Six days down. Still work to do.

Amazing cookies!! 🍪

Full circle moment at the NYS Fair 🥹🌈
After trying the Pebble Pop last year, I couldn’t stop thinking about how fun it would be to turn that inspiration into a Klo’s Farmstand cookie.

Today I finally got to bring some of our cookies to Zac & the Fair Deli crew to try — and they treated us to some Fair Deli goodies + a Pebble Pop in return. 🤍

Such a cool little moment for my tiny farmstand and definitely one I won’t forget. 🐮🍪

Andddd now that we’ve officially completed the Pebble Pop pilgrimage… I think our Fruity Pebble cookie might have earned a permanent spot 👀🌈

DAY 4 AT THE GREAT NEW YORK STATE FAIR 🖤💛

Fair Deli started back in 2000 as a small family business. 26 years later, we have the opportunity to serve thousands of people right here at the Great New York State Fair — and we know none of this would be possible without the people who have supported us along the way.

Our customers are the reason Fair Deli is what it is today. Whether you’ve been coming to us for years or you just tried Fair Deli for the first time this week, every order, every person standing in our line and every bit of support means more to us than you know.

And just as importantly, we’re incredibly thankful for our crew. The people behind the scenes putting in the long hours, working hard and making sure we can serve every person who comes through our line. We couldn’t do this without them.

To go from a small family business started in 2000 to being a proud vendor at the New York State Fair is something we’ll never take for granted.

Now it’s SATURDAY, the weather is PERFECT ☀️ and we’re ready for a big day at the Fair!

Day 2 at the NYS Fair! 🎡

Yesterday was officially the best opening day we’ve ever had and we seriously can’t thank you guys enough. We’re just getting started!

Today we’re showing some love to The Julius.

This isn’t your average Caesar — grilled chicken, crisp romaine, our housemade lemon basil Caesar dressing, shaved Parmesan and crushed pistachios. It’s fresh, it’s different, and the pistachios just WORK.

We’re also incredibly proud to be serving fresh bread baked overnight by Di Lauro’s Bakery, a true Syracuse staple. When two local small businesses come together, we can create something pretty special.

No matter how busy these 13 days get, we want to keep the quality high. We want every single item that goes out our window to be something we’re proud of and something worth waiting in line for.

Thank you for an unbelievable Day 1. Let’s do it again today! 🙌🎡

Another season, another year of appreciating everything that’s made Fair Deli what it is today. The Fair, our crew, our customers, and everyone who’s become part of our story over the years.

This year, we wanted the merch to capture a little bit of that.

EVERY SECOND COUNTS. If you’ve ever worked in a kitchen (or watched The Bear), you get it. The rush, the chaos, yelling across the truck, somehow being in six places at once… and weirdly loving every second of it.

Of course, we had to pay homage to the place that started it all 🎡 Our ticket tee features the iconic silhouette of the Great New York State Fair, a little piece of Syracuse we’re proud to come back to year after year.

And we couldn’t make a Fair Deli collection without the one and only Dr. Pickle, that somehow took on a life of its own.
