Harvested wild Ramps just a moment ago. Will be making ramps pesto tomorrow!! YUM!! Mother Nature provides!

Had to get them before the temps dip to 23 tonight. Fingers crossed the ramps patch survives the cold over the next day or two.

- Knockoff Erewhon Kale & White Bean Salad (vegan, gluten-free; One of the kitchen staff said this is her favorite kale salad yet.) It’s really tasty. I used the beautiful Sweet Winter Kale we source locally from Green Bridge Farms, garlic herb cannellini beans I cooked from dry, creamy perfectly ripe avocados, pumpkin & sunflower seeds, and h**p hearts and toss with a lemon Dijon vinaigrette.

- Ancient Farro & Bean Salad (vegan) - farro, cannellini beans (yes, same beans as above), sun dried tomatoes, Kalamata olives, red bell pepper, parsley, baby arugula, pickled onion, lemon vinaigrette - Yum!

- Tofu Bakon Bits - ready for making a Vegan Caesar Salad tomorrow - Yummo!!
