The Local Loaf is near and dear to my heart. It is made with a blend of whole wheat flour and spelt flour from Carolina Ground—grain that is locally grown and locally milled.
When I wake up at 4 a.m., I walk over to the bakery. As I absorb the peace of the early morning, I start mixing the water and flour. The aroma that rises from the bowl is incredible—fresh, earthy, and completely natural. It's hard to describe, but to me, it is pure happiness.
While the flour and water rest and begin their magic, I prepare the sourdough starter that will bring this dough to life. Once everything comes together, I am left with a beautiful, creamy, happy blob of dough. Then the real magic begins: fermentation.
As the dough slowly transforms, I make myself a cup of coffee, eat breakfast, read the news, and enjoy the quiet start of a new day. There is something special about knowing that simple ingredients—grain, water, salt, and time—are becoming a loaf of bread that connects our local fields, our local mill, and our community.
For me, the Local Loaf is more than bread. It is a celebration of local grain, traditional baking, and the simple joy of starting each day with purpose.
