Ever wondered what the plant behind your tequila looks like when it flowers? ๐ฟ
These towering stalks are called quiotes, and theyโre growing on our familyโs ranch in El Valle, near San Josรฉ de la Paz, Jalisco. That little place is where our restaurant got its name.
Tequila is made from blue agave. When an agave plant matures, it can send up a quiote to flower. Growers usually harvest it before that happens, but with more agave ready than buyers could take, some of the plants on our ranch were left to bloom.
It wasnโt the harvest our family had hoped for. Still, thereโs beauty in seeing the fields flowerโand we wanted to share that little piece of El Valle with you. ๐
