Rice Pudding 🍚

1 cup white rice
4 cups whole milk
1/2 cup granulated sugar
1 teaspoon vanilla extract
1/2 teaspoons ground cinnamon
1/4 teaspoons salt
1/2 cup raisins (optional)

In a medium saucepan combine rice, milk, sugar, cinnamon, and salt. Bring to a gentle boil over medium heat.

Reduce heat to low and simmer, stirring frequently, for about 25-30 minutes.

Remove from heat and add in vanilla and raisins (if using). Let cool and enjoy!

Grammy’s Recipe 💜
(I used a rice cooker but you can also do this recipe on a stovetop)

1 cup white short-grain rice
2 cups chicken or vegetable broth
2 tablespoons butter
3 cloves garlic, minced
½ cup heavy cream
½ cup grated Parmesan cheese
1 teaspoon salt
½ teaspoon black pepper
1 tablespoon chopped fresh parsley (optional)

Rinse the rice under cold water until the water runs clear.
In a saucepan, melt butter over medium heat. Add garlic and sauté for 1 minute.
Add the rice and stir to coat with butter.
Pour in the broth and bring to a boil. Reduce heat to low, cover, and simmer for 18–20 minutes until rice is tender.
Stir in the heavy cream, Parmesan cheese, salt, and black pepper. Cook for another 2–3 minutes until creamy.
Garnish with fresh parsley and serve warm.
