Today we were honored to serve the Summerville Rotary Club’s Golf Tournament which raised a ton of money for our Summerville Community and also celebrated our 4000th meal.

I am thankful to each Volunteer, but a special shout out to Rotarians Howard, Frank, Katie, Ashley, and Alex for stepping up to make Sandwiches and bag them up.

I started this non profit to serve Summerville’s other non profits. That’s a weird thing to explain, but After being on the boards of multiple non profits, I see the profit disappear because of food. There isn’t much I can change, but that’s something. And that’s what we did today.

So what do we do? We donate BBQ to local organizations to serve at their functions while keeping the old traditions alive.

They don’t have to pay, but we do accept help to PIF.

If you can help, we would appreciate it. My family matches each donation Dollar for Dollar to make Summerville a better place to call home.

What started at 5am lighting the fires ended at 10:30 pm washing pans.

It’s no secret that we are down to 1 non gas BBQ restaurant on this side of Charleston and 0 within town limits. It’s a lot of work doing it the right way... But it’s work that’s worth doing to deliver a product to be proud of.

We produced a little over 100 lbs of chopped pork that’ll be used for a few things.

Our mission is to provide wood fired bbq for local non profits, and the Summerville Rotary Club will be able to add a significant chunk to their coffers for their golf tournament which puts that money straight back into Summerville.

Our signature sauce is a Pepper Vinegar sauce with a bit of a bite. Always homemade.

Starting from scratch not only creates a better product, but allows our funds to go further. We can create a gallon of our signature sauce for about $5 vs $30 or more buying it.

Quality food, done the old way.

We are thankful for community partners like Hickory Bluff Berry Farm (at the Summerville Farmers Market NOW!) for generous contributions that allow us to continue to support great organizations in Summerville like Katie's Krops. You’ll see these guys on their menu soon!

It’s worth noting that it’s getting harder and harder to find heritage, South Carolina produce like these White Acre peas and okra. Folks like the Parker Family are keeping our foodways alive right in our backyard.

Head out to the Summerville Farmers Market, grab some awesome local produce from folks like Hickory Bluff Berry Farm, and tell them thank you for all they do to support our community!

Days don’t always go as planned, especially with wood cooked food.

When starting the fires this morning, we suffered a pit fire. Luckily, all the meat was saved and the fire suppressed. We’ll make the needed repairs to the pit, but was able to get going a little later after a thorough cleaning of all the salt used to extinguish.

We still produced 120 lbs of pork today, short of the plan, but great considering! Looking forward to this raising much needed capital for our community.

We are cooking 150 lbs of pork tomorrow. That calls for a lot of rub. You should taste the meat and the smoke, so we go salt only on our skin on pieces (picnics and bellies) and use this rub on the butts.

We mix our own with a simple southern profile and add a little something extra not pictured to get it just right.
