One of my favorite things to see on my great-grandmothers kitchen table was her homemade creamed cornπ½
If you're looking for some creamy goodness to add to your summer cooking, this is a winner!
Mammy's Creamed Corn
5 fresh ears of corn (shucked)
2 cups water
1 cup flour (I use self-rising)
1 tsp salt
Pepper to taste
2 tbls butter
Shuck and clean your corn.
In a large saucepan, take your knife and remove the kernels from the cob placing them into your pan.
When the ear is free of all kernels, take your knife down the sides of the cob, pushing all the juices of the cob into the pan. (THIS IS WHAT MAKES YOUR CORN SO CREAMY :) ) Do this until the cob is almost dry.
Repeat this with every ear of corn.
Add water and butter. Cook over medium heat until boiling.
Slowly add flour and stir (almost like you're making gravy) to thicken, pressing out any lumps. (Add more water if you need it).
Keep over medium heat for about 5 min or until desired creaminess. π Add salt and pepper to taste.
