Winter has a way of slowing everything down.
The soil hardens. The trees grow quiet.
But beneath the surface, something is always preparing.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Spring has a way of waking everything back up.
The soil softens. The trees begin to speak again.
What once felt still is now quietly coming to life.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
We’re not sure exactly when the shift occurred
( it never rushes in ) but it has arrived.
It simply begins again, quietly and steadily, with small seeds in the ground waiting for their time to grow.

And while the world is always rushing to release something new… new this, new that (us included) it’s easy to forget that what people are really looking for isn’t just novelty.
It’s something mundane, something real.

And so that’s what we’re bringing: Our same-ole flavours, inspired by that same idea: seasonal, simple, and made with real ingredients. Carefully batched. Thoughtfully made. Poured out, simply in the moment.

Gilly Fam!

It’s been a wild journey for us and this year five has been our craziest yet! But we have some good news in store that we can’t wait to share. First we want to give you a heads up about this coming season.

As you may know, is a historical property and will be turning the BIG 1-9-0! So, we’ll be taking an extended Winter Break starting Christmas Eve to do some much needed renovations.

We will miss seeing your faces daily, we hope the distance will make our hearts grow fonder. Thank you for your constant support and patience as we grow our small business. Please visit our site for more updates and stay tuned for our reopen date!

We will be closed on
Thursday, November 23rd and Friday, November 24th for Thanksgiving

Don't you worry, we'll be back in action on Small Business Saturday, November 25th, with our usual bar hours; Open daily from 9am - 3pm, with our kitchen sizzling Wednesday to Sunday from 9am - 1pm.
