Every fish house has some kind of fish – flounder, shrimp or sole – stuffed with crab. Here’s my take on that classic. The lobster is butterflied – split lengthwise but not quite in half; just enough to crack it open for stuffing. The crab is aggressively flavored with fresh herbs and lemon and topped with an herbed panko crust for texture. This is a special occasion recipe but absolutely worth the trouble.

Yellow Lobsters

Even rarer than a live red lobster, yellow lobsters, or calico lobsters as they’re also known, are believed to be a one in thirty-million occurrence.

In 2014 one of these rare yellow lobsters was actually rescued from a supermarket lobster tank in America and set back into the wild.

These calico lobsters tend to vary in color from a very pale yellow, all the way through to a vibrant orange-yellow.

This broad category is reserved for all lobsters that lack claws on the front of their bodies, and several species come under this genre. These crustaceans are easily recognizable because of their very thick and oversized antennae; this is where the word ‘spiny’ comes from.

These crustaceans are nocturnal in nature and feed on algae, snails, crabs, and other small creatures that dwell on the bottom of the ocean floor. If they are present, it means that the ecology around them is sure to be healthy and diverse.

Spiny lobsters are best known for their mass migration after rainstorms at their place of habitation.

‘Cotton Candy’ Blue Lobster

“We were measuring and picking out lobsters on our strings of traps, and all of a sudden, this glow came up in one of the traps,” says lobsterman Bill Coppersmith to NPR. “I go, wow, look at that. And I grabbed that lobster. Sure enough, one of my helpers said, gee, that's the color of cotton candy.”

Coppersmith found the female lobster—which he’s named Haddie, after his 8-year-old granddaughter—in Casco Bay, an inlet of the Gulf of Maine. He and his colleagues estimate the lobster is 1-in-100 million find, though it's unclear exactly how many there are in the wild. The baby blue shellfish turn up about once every four to five years.

The fact that this albino lobster has lived to roughly 30 years is a minor miracle, given that a big part of a lobster’s survival in the wild is the camouflage given to it by its dark coloring.

This dark coloring helps it blend in with the dark seabed depths where they live.

So for a bright-white lobster to have survived that long without camouflage and not be eaten by a predator like a shark is a pretty special feat.

Now if you think about how unlikely it is for a lobster with no camouflage to reach this age, not to mention the unlikelihood of there actually being a crystal lobster caught, then this specific lobster is probably rarer than a cage full of blue, red, and calico lobsters put together!

Rainbow Lobster

An exceedingly rare, psychedelically-hued, rainbow-tinted lobster caught in St. Marys Bay, Nova Scotia could be the poster child for the acid-ification of the oceans.

Far out, man... like, far out in St. Marys Bay is where Captain Chad Graham hauled in the "The Technicolor Dream Lobster”. The Brier Island-based lobsterman snapped a couple of shots of the colorful crustacean whose psychedelically-hued shell blazed with iridescent violet streaked with white, yellow and blue.
