Elkstone Farm

Elkstone Farm On this special land we are growing nutritious food for our neighbors while we nurture a close community.

Side by side, we are working with the soil, tasting its fresh produce, and learning to be better stewards of the Earth. The seeds of inspiration for Elkstone Farm germinated with two key concepts – respect for the agricultural traditions of Strawberry Park and a desire for the land to be as productive as possible. To integrate these ideals, we adopt those practices that are tried and true, experiment to discover new possibilities, and share ideas. It’s our genuine hope that we can renew appreciation for this heritage by making the most of this beautiful land while inspiring others with our experiences. Taking a cue from the valley’s earlier inhabitants, we’re endeavoring to bring commercial produce back to Strawberry Park. In the early 1900s, this fertile area just north of downtown Steamboat Springs, was known for its commercially-successful Remington strawberries. Plants yielded large berries that were ripe long after plants from lower elevation farms had stopped bearing fruit. Prosperous years promised local farmers a generous profit, but the boom ended in 1916. We believe in carrying on some of these agricultural traditions. As stewards of this land, we’re also responsible for caring for the environment, managing our resources and using them efficiently. Our idea is rooted in a desire to make the most of what we have and cultivate practices that are less impactful on our environment. As we envisioned the possibilities for a farm, we discovered inspiration everywhere including the landscape of New Zealand with its diverse vegetation and geomorphic features. When we were introduced to the permaculture philosophy by former Steamboat Springs’ environmental designer Lisa Benjamin, the vision transformed and coalesced. The ecological, sustainable concepts of permaculture harmonize with our core values. By observing our natural ecosystem, we are designing an agricultural system that works with our environment, produces sufficient yields, and minimizes waste. We manage diverse environments by employing permaculture principles and practices that pertain to patterns (observing spatial and temporal patterns in nature and incorporation of these patterns into the design of the farm), guilds (grouping plants that work together for mutual benefit), and layers (stacking a tall canopy of trees, mid level shrubs, groundcover plants and soil). In controlled environments such as our greenhouse, we can also create ecosystems that imitate nature in other parts of the world such as the Mediterranean. Elkstone Farm is being developed slowly and thoughtfully and we’re excited to make a healthy, delicious contribution to our community.

This past week we gathered hawthorn berries that will steep over winter to make a Hawthorn Longevity Cordial that will be bottled next year. Rich in antioxidants and other beneficial compounds, the hawthorn plant has been used for centuries by people around the world to support heart health, blood pressure, and cholesterol. We express a deep gratitude to the hawthorn for keeping us happy and healthy and providing an abundance for this year’s harvest.

Check this out! This female honey bee is collecting pollen in the corbicula, or pollen basket, on her hind legs. Watch how she uses her front legs, which have been moistened by her tongue, to brush the pollen from the rest of her body to her hind legs and into the basket. She’ll take her bounty back to the hive for food for her colony. These old flowers were sitting in a pile waiting to go into our compost. The bees are taking advantage of every food source while they’re still available!

The Fall Equinox was on Tuesday! A marker that fall is here and also a great time for noticing and reflection. Around the farm we’ve noticed the sunlight hitting at different angles, cooler mornings, and a crispness to the air. The plants have noticed too- our summer crops are starting to slow down and our greens flourishing under the less harsh sun. What have you noticed about your surroundings this week?

Growing good food is only part of the work we do here. Sharing what we learn matters too.

Education is one of Elkstone’s pillars, which is why we open the farm through tours, workshops, and conversations that help people understand where food comes from, how healthy soil supports healthy communities, and what becomes possible when we work with nature.

And that curiosity can start young.

We love creating opportunities for families to look closely, ask questions, and experience the farm firsthand. Because good food, healthy land, and the knowledge to care for both are things worth passing on.

Labor Day feels a little different at Elkstone.

By this point in the season, every harvest carries months of work behind it. Seeds started, beds prepared, plants tended, watered, protected, picked, washed, cooked, and sometimes preserved for the colder months ahead.

Chef Russell Goodman has been preserving some of this season’s summer squash, saving a little bit of summer to share later.

It feels especially fitting on this day, the unofficial end of summer so to speak, and a good reminder that the abundance we enjoy this time of year is always a labor of love.

Happy Labor Day from all of us at Elkstone.

Some artists make you want to lean in and listen a little closer.

Marshall Thomas brings that kind of presence. His music is soulful, thoughtful, a little wild around the edges, and shaped by years of travel, writing, teaching, and paying attention to the world around him.

This Friday 9/4, he’ll be joining us at Elkstone for an intimate evening of live music beneath the aspens.

Bring a blanket and a chair, settle in, and come spend the evening with us.

Details and tickets through our events page.
