The beets we cooked from Bee Grateful Farm this past weekend made me think of something a lot bigger than beets. Sure, you can easily head to a supermarket and grab beets there, available year round even in Steamboat.

But why go through all the effort of waking up at dawn, work under the hot sun, painstakingly nurturing seeds into plants day after day? And why do we, as a restaurant, opt not to simply click a button and order from a large-scale produce supplier, but instead seek out someone who aligns with our 'why', and choose to buy from the farm?

Well, the answer is two-fold. First and foremost, it's because of the taste. The locally farmed vegetables that Joe delivers every Thursday and Friday are served on your plate by Saturday, bursting with a freshness that has become a rare pleasure in our times. They're an absolute joy to work with, each carrying a unique flavor and aroma.

But there's more to it - we don't just like it complicated for the sake of it! The second reason is that we genuinely want our guests to savor the best. To offer you nothing short of extraordinary, we're prepared to go the extra mile. We want you to experience the essence of Steamboat - the beauty of our land, the wisdom of our farming practices, the dedication of our growers, and the tenacity of restaurants like ours that strive for the best for their customers.

Do you have an obsession? I do. Farms! As a child, I spent my summers watering the garden from old bathtubs 🛀🏽 strategically placed and filled with icy well water, left to warm up in the sun. These are memories I cherish – the process of nurturing the seeds, watching them grow, and finally, tasting the bounty that made its way from the garden to the table.

During my culinary journey in Paris, I was deeply inspired by my chef who knew the farmer growing his cucumbers for over a decade. He knew the family and remembered everyone by name. It was about connection. And creation. I realized that these deep relationships indeed impact the flavor.

So, let's emulate the good! Let's proudly place that magical 'from' in front of our ingredients to symbolize our connections and shared tastes. Together, let's create culinary memories!

When you joined Sauvage in 2020 I could not hope that you will be polishing the floors in 2023 :) It’s very very very rare that people that young and that bright stay in Steamboat and are so committed to hospitality as you are! Bad❤️ass!
