Buffalo Sandwiches Pt. 2: Taste the Beef on Weck & the Staten Island Gravy Train. 🦬🏈 At Ralph’s, the Buffalo Beef on Weck stacks beautifully slow-cooked roast beef onto a salted caraway-seed bun, accompanied by house-cut fries, a toasted onion ring, beef au jus with sautéed onions, and house-made horseradish cream. Then Terrible Eddie’s Staten Island Gravy Train rolls in with trimmed bottom round cooked medium rare, au jus, fresh mozzarella, and that unmistakable side of Black Tar Gravy. 🚂🔥 This isn’t about copying Buffalo—it’s about giving two signature sandwiches their own Staten Island identity.
