«Korean soju makers wanted their products to be sold in restaurants with a beer and wine license, which typically can’t sell distilled spirits. The state’s Alcoholic Beverage Control granted an exception to soju under 24% alcohol by volume. When Japanese shochu producers asked whether they could be granted the same exception, they were told yes — as long as they labeled their products as soju.

«Following that, “there were a significant number of Japanese shochu distillers who opted to label their product as ‘soju,’” said Chikako Ichihara, a spokesperson for the Japan Sake and Shochu Makers Association. “The primary motivating factor was the opportunity to do business in California.” Other distillers, Ichihara said, “viewed the obligation to include a Korean name in the label as inappropriate and ultimately gave up on exporting to the U.S. market.”

«...(Some producers dilute their shochu to exactly 24% so it could be sold in restaurants with beer and wine licenses in California.) But the fact that any bottles had to be mislabeled only exacerbated the confusion that already existed between shochu and soju.»

While Fuji-Jade has opted to no longer have a liquor license, and can therefore no longer serve you shochu, sake, and alcoholic beverages in general... we do encourage education about rice wine (sake) and distilled starch beverages (such as shochu and soju)--which can be purchased at the N.Atherton Fine Wine and Good Spirits store, across from Wal*Mart.

Shochu, a distilled spirit from Japan, was mislabeled as Korean soju for 25 years under California law. That's finally changing now.

In honor of Korean Black Day, have you tried our Zha jiang mien? Called Jjajangmyeon in Korean, the dish is a favorite that honors cooking traditions across Southeast Asia with slightly different variations from one region to the next. (We think ours is pretty much the best. ;) )

Not just for lonely hearts, these black bean noodles laced with pork and seafood are the kind of carb-laden, umami-heavy comfort food you'll crave all year long.
