The beautiful city of Hyderabad is also known as the Biriyani Capital of India. As famous as its precious pearls and jewelry, Hyderabadi cuisine reflects sheer royalty as these were once served to the ‘Nizams’ of Hyderabad (18th century rulers of Hyderabad). Left behind as a rich, princely legacy, Hyderabadi cuisine is an amalgamation of Mughal, Turkish, and Arabic recipes along with influences from the native Telugu and Marathwada cuisines. Southeast Asians and the Chinese have long been visiting India in search of philosophical teachings and better business prospects. The earliest known Chinese migrants, primarily the Hakkas, established the first Chinatown in India, around 1778, in the eastern city of Kolkata. While the Chinese folks there were renowned dentists, tannery owners, sauce manufacturers and beauticians, it was as restaurateurs that the Chinese made their mark in India.

Quick to realize that Indians loved spicy, oily preparations, the Chinatown chefs reformulated classic Indian and Chinese dishes with fried Indian spices and condiments, leading to such amazing delicacies as the Sichuan Paneer, Chili Chicken, and Chicken Manchurian, among others. While the cooking methods used are essentially Chinese, the ingredients are sampled from the Indian staple, leading to abundant use of garam masala (hot spice mix), corn flour for thickening, an overdose of chili, garlic, ginger, soy sauce and monosodium glutamate to enhance and generate robust, spicy flavors. Of Kashmir, the great poet Amir Khusrau once wrote “Gar Firdaus bar-rue zamin ast, hami asto, hami asto, hamin ast” (roughly, “If there is a heaven on earth, it is here, it is here, it is here”). Indeed, nature has bestowed upon Kashmir implausible beauty, and truly it is “heaven on earth”. Kashmir is resplendent with majestic Chinar trees that turn the entire Kashmir valley yellow and red during the fall, silver lakes that turn golden during the first light of dawn, and jewel blue rivers in which flow the soul of ice-cold mountains.

Wazwan (pronounced waaz-wah) is a multi-course meal prepared by denizens of Kashmir during special occasions, weddings and other festivities. A full course of wazwan contains anywhere from seven to thirty-six unique preparations of mutton, chicken, beef, fruits and vegetables, prepared by a senior chef (wouste waze) and his army of junior cooks. In true Kashmiri tradition, four guests are seated together at a table, and share a wazwan meal out of a large copper plate called the traem. Indeed, the wazwan meal is a cornerstone of Kashmiri identity and culture, and master chefs who excel in wazwan cooking are celebrated throughout the land. Join us this week, as we embark on our most ambitious and exotic menu to date, consisting of the spectacular and spicy “Mutton Rogan Josh”, coupled with spicy “Kashmiri Dum Aloo”, an exotic “Kashmiri Pulao” and a “Kashmiri Phirni” most delicious!
