Hello our Kilkenny’s family!! 🇮🇪❤️

It’s been a while since we’ve properly been on here, and you were definitely due an update. We kind of fell off the map for a bit, but for good reasons ✨

We made the move to Star, Idaho 🏔️ to be closer to Annie’s family — and honestly, no regrets at all. We absolutely love this area. That said, we miss our friends back in Michigan like crazy 💙, and we really miss our Kilkenny’s family. Below are some photos that remind us of the kind of love you all showed us in St. Johns and Horrocks — total chaos at times 😅, but it was the best kind, and it sure was fun.

Life has finally started to settle 🙌 We’re both settled into our jobs, we’ve bought a house 🏡, and it feels like things are coming together. Most importantly, our little lady has grown so much it’s honestly wild — she’s nearly stringing sentences together already 🥹

As for Kilkenny’s, the trailer needed a few updates, which we’ve just wrapped up 🔧🚚 It’s officially done now and just needs to be picked up.

Now it’s time to start sharing our story again 📖 — lining up vendors, building the kind of relationships we were lucky to have back in Michigan, and doing what we’ve always tried to do best: showing the love we have for this business through the food we put out 🍽️🐟🍟

In some ways, this feels like starting all over again 🔄 — but we know the grind now. We know what’s involved. We know the hustle. And we can’t wait to show the people of Idaho why we believe Kilkenny’s Irish Fish N’ Chips brings something truly special to the table 🇮🇪🔥

We hope you’ll stay along for the ride and watch Kilkenny’s grow again from the ground up 🌱

And to our Michigan family — if you ever find yourselves out here in Idaho down the road, the fish & chips are on us 🐟🍟❤️ Consider it a small thank-you for making the effort to come see us.

One more thing — I couldn’t find a photo Patrick Watts would actually approve of, but he absolutely deserves a shout-out. Patrick spent many long days with me on the fryers, keeping things moving when it was chaos, and we wouldn’t have been able to do half of what we did without him. Appreciate and miss you sir!

Hi friends! 👋 Just a little thank you...

When we first rolled out Kilkenny’s Irish Fish ‘N Chip 🇮🇪, we had no idea just how much Michigan would come to feel like home.

Even though we were mostly out on weekends (and the odd Friday), you showed up. You brought your families, told your friends, stood in line, and made us part of your routine. Rain or shine, you supported our little trailer—and that meant the world to us ❤️😃

We didn’t end up finding the right person to take Kilkenny’s over here in Michigan, so the trailer will be coming with us as we head into our next chapter 🚚.

And here’s the thing: when we get Kilkenny’s going again in Idaho, we’re diving in headfirst. We’re ready to build something even bigger—without losing the heart and soul that got us here in the first place.

We’ll still be sharing updates—life stuff, behind-the-scenes, and all the steps as we get things rolling again—so if you’ve enjoyed being part of the ride, we’d love for you to stick around 🐟🍟.

Michigan, thank you. For every visit, every shoutout, every bit of support. You helped make this dream real—and we’ll always be grateful.

🐟 Kilkenny's Irish Fish 'N Chip – One Last Hurrah in Michigan! 🍟🍽️

It’s hard to believe, but tomorrow is our final outing before we head west to Idaho to be closer to family.

We can’t say thank you enough to this amazing community. You’ve shown up for us time and time again, and it’s been a privilege to share our food and a few laughs with you along the way. Truly, we’ve had the best customers anyone could ask for.

When I was a kid growing up in Ireland, I used to dream about owning a chipper—the kind of classic Irish takeout spot where you’d get proper fish & chips, curry sauce, and (of course) battered sausages. I even begged my parents to buy one (they didn’t, of course), but that dream never left me.

Years later, after moving to the U.S., my wife and I spent nearly two years perfecting recipes on our little apartment porch—frying, testing, tasting—until we finally got it just right. That passion turned into Kilkenny’s Irish Fish ‘N Chip—a food truck we built from scratch, with nothing but heart, hustle, and a deep love for real Irish comfort food.

And it became everything we hoped for and more. A thriving business. A local favorite. A place where friends and families came together over fish & chips, curry sauce, battered sausages, and warm conversation.

To our amazing Michigan community: thank you. Your support, kindness, and loyalty have meant the world to us. Every person who walked up to the window, gave us a shout-out, or made Kilkenny’s part of their weekly routine—you’ve helped us live our dream, and we’re truly grateful.

Now, it’s time for a new chapter. We’re moving to Idaho to be closer to family and start fresh—but that doesn’t mean Kilkenny’s has to end. We’d love to find the right person to take over Kilkenny’s and the trailer to keep it going right here in Michigan. Someone with the passion, drive, and appreciation for great food and community that has defined this business from the start.

This isn’t just a hand-off—it’s a chance to continue something meaningful, with a strong following and a proven foundation.

One thing’s for sure: Kilkenny’s will rise again in Idaho when the time is right. But right now, we want to see it stay alive and thriving in the state where it all began.

We’re currently working on finalizing a schedule for our last outings here in Michigan, so stay tuned—we’ll be posting updates as soon as we have them. In the meantime, stop by when you can, grab your favorites, and help us celebrate the journey.
