Dear Friends, Family, and Our Gibbs Community,

Every business has a beginning.

For us, Gibbs Chophouse began with family.

It was the day after our daughter Ashley and our son-in-law Jesy's wedding, our family gathered one last time before everyone headed home to different states.

Scott and I brought our griddle to the OLY in Stanton and cooked brunch for everyone.

Pancakes, bacon, sausage, eggs, and a whole lot of love.

We weren't thinking about opening a restaurant. We were simply enjoying one more morning together with the people we loved.

But that morning reminded us of something we've always loved—bringing people together around good food and sharing something we've put our hearts into.

We didn't know it then, but it was the beginning of something more.

Over time, the right people and opportunities began coming together.

And one of those people was already part of our family.

Jesy.

Jesy isn't just our son-in-law. He's our Head Chef, and his talent, creativity and passion helped turn an idea into something real.

All five of our children have also stepped in to help along the way. They've worked in the kitchen, served, bartended, greeted guests, created drinks and done whatever needed to be done.

That's why when we say, “it took a family,” we truly mean it.

We believe God deserves the credit for the way it all came together.

Gibbs didn't begin with a restaurant.

It began with a wedding.

It began with family.

It began with a griddle.

And somehow, it became a place where we could share what we love most: food, family, fellowship and community.

To everyone who has walked through our doors, supported us, worked alongside us, celebrated with us and believed in us—

thank you.

Gibbs isn't just our restaurant.

It's a piece of our family that we opened up and invited our community into.

And we hope you feel that every time you walk through the door.
