I cannot wait to make my persimmon custard tarts again!!

I’m excited to be returning to Hilton Grand Vacations StoneWater Cove on September 26th for another evening of scratch-made, locally inspired food.

Every course is built around the flavors of the Ozarks and the season, using organic ingredients and plenty of care from start to finish.

🌿 First Course-
-Roasted Butternut Squash Salad
Roasted butternut squash with baby kale, shaved fennel, roasted delicata squash, toasted pepitas, pickled red onion, crumbled local chèvre goat cheese, dried cranberries, and crispy fried sage. -Finished with a warm brown butter–sage vinaigrette and a drizzle of sorghum reduction.

🐟 Main Course
Walleye Almondine
Pan-seared walleye finished with a classic brown butter almondine of toasted almonds, fresh parsley, and lemon.
-Served with herb-roasted fingerling potatoes and a medley of roasted seasonal vegetables.

🍂 Dessert
Wild Persimmon Custard Tart
A buttery pastry shell filled with silky wild persimmon custard, served with orange whipped cream, Mugolio toasted pecans, and a drizzle of sorghum caramel.

This is one of my favorite fall menus of the year, and I would love to share it with you.

🌱 Have you heard of the Little Farm Association?

They’re a membership program that travels across southeast Missouri each week, collecting produce and goods from small farms and bringing everything to one convenient pickup location, in Ava Mo.

Members simply place their order each week, choose what they want, and pick it up making it easier to support local farms.

I was able to meet with the owner this week and talk about what they do and how we can partnership.

I love seeing organizations like this working to make fresh, local food more accessible while helping small Missouri farms thrive.

Today I was able to visit my grandma (85) in Branson to gather information about our family history here in the Ozarks for my foraging cooking guide I’m writing

“Sycamores and spicebush: An essential guide to cooking foraged foods of the Ozarks”

I think it’s important to write a section about my family history in the Ozarks going back to the 1700’s.

It is part of why I love my home, and why the guidebook will be region specific.

The Ozarks has formed me and shaped me.

I learned about the farm plots we owned around bennet springs area when it was just a town called Brice.

I learned about where we settled, mainly around St. Louis or Sedalia area.

But I also learned about our civil war history, and even revolutionary war.

There is a lot to dig into, and I think family ancestry is something people are becoming less caring about.

But it matters to me.

As a chef I want to tell a story through my food, and part of that story is where my roots are.

One of my favorite flavors of the summer can be found all along field edges on the Ozarks.

Many people are surprised to learn that we have four species of sumac growing in Missouri, but only one is native.
Another common misconception is that poison sumac occurs in Missouri, so the clusters of bright red sumac you see along roadsides and field edges are not poison sumac.

The berries have a naturally bright, citrusy flavor thanks to the malic acid they contain.
I love using them to make refreshing wild sumac lemonade, balancing them into sweet-and-sour sauces, and drying them into an all-purpose seasoning that adds a beautiful tangy finish to everything from roasted vegetables to grilled meats.

The Ozarks are full of incredible flavors if you know where to look.
Sumac is a perfect reminder that some of the best ingredients aren’t found in a grocery store they’re growing right outside our door. 🌿

Food is so much more than cooking to me.

Anybody that trains under me has heard this:

Is a piece of bread gross?
No

But what if I toast it?
It is better.

What if I toast it and put butter on it?
It is better.

What if I toast it and put butter and jam on it?
It is better.

When I cook I want the BEST for my clients,
I don’t just want “good”.

I want to give them excellence, every time.

This is more than just cooking for someone, this is a PASSION.
A passion to serve my clients the best.

I don’t want to just give them a piece of bread which is good.
I want to give them something they will NEVER forget.
I hope to raise the standards in the industry, because honestly it needs it.

Transparency is the foundation that everything I do is built upon.

🍂 Fall has always been my favorite season to cook.

The cooler weather, the harvest, gathering around the table with family and friends it gives me a warm feeling that stick around all year thinking about it.
