UIS Campus Community Garden

UIS Campus Community Garden The Community Garden is an outdoor classroom where community members grow fresh produce, build relationships, and work to make our food system sustainable.

The intention of the UIS Campus Community Garden is to serve as a model of sustainability, to build community by providing a shared space for students and faculty to come together, to provide hands-on learning opportunities, to promote UIS by demonstrating our commitment to sustainability and student involvement opportunities, and to provide local food for campus dining.

Our UIS Campus Community Garden worknight for tonight, Thursday 7/27, is canceled due to the heat index. Stay cool! The Garden is open for harvesting anytime, and we have some delicious cantaloupe ready to go. Feel free to visit in the morning when it is cooler! See you next week.

We finally had a volunteer last Wednesday! There's nothing more exciting than meeting a new person and giving them veggies for their dinner. Even if you can't make it at 4 or stay the whole time, volunteers/curious visitors are always welcome!

In addition to new deer friends, a friendly skunk decided to pay a visit last night! 🦌 🦨

Stay tuned for a veggie chip recipe I'll be trying out with eggplant, radishes, and beets. (As someone who's never eaten any of these veggies before, I'm excited to share the results)

The garden has been busy the past week. Not only are multiple veggies/fruits now ready to harvest, we’re getting multiple visits from the local deer! The tomatoes are getting close to ripe and there’s more peppers than I can keep up with, but this is the rewarding part 🍅 🫑

The beans, beets, and radishes are close to being harvestable as well. Cucumbers will be coming soon 🥒

The collard greens, cilantro, kale, fennel, basil, and swiss chard are ready to eat (come to one of the work nights if you’d like to find out how to harvest anything or come by anytime and harvest them yourself)🥬
