Sharing a SECRET RECIPE!! Skinny Chicken Pot Pie, the perfect rainy night dinner! Pics to follow!

Sauté about 4-6 chicken thighs, do not stress about thigh meat over breast meat, the fat difference is negligible but the flavor difference is huge and sauté thighs that are on the bone, then remove the meat and cut it up, this is a huge flavor secret. It’s an extra step over using boneless but it’s worth it.
Chop in small dice a cup each of carrots celery onions and mushrooms add a few cloves of garlic or whatever veggies you like, add to the pan the meat just came from, and sauté 4 minutes or so, then add back the meat and herbs, I use parsley sage rosemary and thyme from my garden, sauté a minute or so to combine add a half cup of peas sauté another minute. Deglaze with a splash of white wine add about a cup of chicken broth and a splash of cream salt and pepper and simmer.
Roll out a pastry dough, yes I make my own and no it is not hard or time consuming! Use this recipe it’s easy if you don’t have your own. Mine is a secret 😁 https://www.epicurious.com/recipes/food/views/pastry-dough-356091
Put each filling in individual crocks and top with pastry crust and bake for 20 minutes. Because we used very little fat for the filling feel free to have a pastry topper, but if you’re being strict then leave it off. Enjoy!
